My Grandma’s Apple Strudel

 

Instructions

1. Make the Apple Filling

  • In a large bowl, toss the apple slices with sugar, flour, and cinnamon until evenly coated.

  • Set aside while preparing the crust so the apples can release some juice.

2. Prepare the Crust

  • In a mixing bowl, whisk together flour, salt, and sugar.

  • Cut in shortening until the mixture resembles coarse crumbs.

  • Combine egg yolks with water to equal 1 cup and stir into the flour mixture until a dough forms.

  • Divide the dough in half.

3. Roll Out the Bottom Crust

  • Roll one half into a rectangle to fit a 10×15-inch jelly roll pan.

  • Press it evenly across the bottom and slightly up the edges.

4. Add the Filling

  • Spread the apple mixture evenly over the crust.

5. Roll Out and Add the Top Crust

  • Roll out the second half of dough and place it over the apples.

  • Pinch or crimp the edges to seal.

  • Brush the top with reserved egg white and cut a few slits for steam to escape.

6. Bake the Strudel

  • Bake at 350°F (175°C) for 45–60 minutes, until the crust is golden and the filling bubbles.

7. Make the Icing

  • Mix powdered sugar, vanilla, and enough milk or cream to create a thin glaze.

8. Glaze the Strudel

  • Spread the icing over the hot strudel immediately after baking.

  • Let cool slightly before slicing into squares or bars.

Apple Variety: Tart apples like Granny Smith or Honeycrisp give the best flavor and texture.
Extra Spice: Add a pinch of nutmeg or allspice to the filling for a warm, aromatic twist.
Nutty Upgrade: Sprinkle chopped walnuts or pecans over the apple filling before adding the top crust.
Make Ahead: Assemble and refrigerate before baking; add a few extra minutes to the baking time if chilled.
