One-Pot Lasagna Soup

 

Instructions

1. Cook the Meat

  • In a large pot over medium-high heat, cook ground beef, sausage, and chopped onion until fully browned.

  • Drain excess fat.

2. Add Garlic

  • Return the pot to the stove and sauté garlic for 30 seconds until fragrant.

3. Build the Soup Base

  • Stir in pasta sauce, diced tomatoes, tomato paste, chicken broth, sugar, balsamic vinegar, basil, oregano, bay leaf, and salt and pepper.

  • Cover and bring to a boil.

4. Add the Noodles

  • Break lasagna noodles into pieces and stir into the pot.

  • Reduce heat to medium-low and cook until noodles are tender.

5. Serve

  • Remove the bay leaf.

  • Ladle soup into bowls and top with Parmesan, mozzarella, or dollops of ricotta. Serve warm and enjoy!

Extra Veggies: Add chopped bell peppers, mushrooms, or spinach for extra nutrition.
Cheesy Crust: Sprinkle with extra cheese and broil for a bubbly, melty topping.
