
Crispy Onion Pakoras: A Golden, Flavorful Indian Snack
Few snacks are as comforting as a plate of freshly made Onion Pakoras. Thinly sliced onions are coated in a lightly spiced chickpea-flour batter and fried until the edges become crisp and golden while the onions inside turn soft and flavorful. They are especially delicious with a cup of hot tea and a simple dipping sauce.
The beauty of onion pakoras is that they require simple pantry ingredients, yet the combination of spices, onions, and chickpea flour creates an incredibly satisfying snack.
What Are Onion Pakoras?
Onion pakoras, also known as onion bhajis in some regions, are a popular Indian fried snack made primarily with onions and besan, or chickpea flour. Unlike a thick, cake-like batter, traditional pakora mixtures are relatively loose and cling naturally to the onions.
A few basic spices add warmth and flavor, while fresh herbs and green chili can give the pakoras an extra layer of freshness and heat.
Ingredients
For approximately 4 servings, you’ll need:
- 2 large yellow or red onions
- 1 cup chickpea flour (besan)
- 2 tablespoons rice flour
- 1 green chili, finely chopped, optional
- 2 tablespoons fresh cilantro, chopped
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1 teaspoon ground coriander
- 1/2 teaspoon red chili powder
- 1/2 teaspoon garam masala
- 3/4 teaspoon salt, or to taste
- 1/2 teaspoon baking powder, optional
- 2–4 tablespoons water, as needed
- Oil, for frying
For Serving
You can serve the pakoras with:
- Mint-cilantro chutney
- Tamarind chutney
- Plain yogurt mixed with a pinch of salt
- Tomato or chili sauce
- Hot tea
Step 1: Prepare the Onions
Peel the onions and cut them in half from top to bottom. Slice them thinly into strips.
Place the sliced onions in a large mixing bowl and separate the pieces with your fingers. This helps the flour and spices coat the onions evenly.
Step 2: Season the Onions
Add the salt, cumin seeds, turmeric, ground coriander, red chili powder, and garam masala to the onions.
Add the chopped green chili and cilantro if using.
Toss everything thoroughly with your hands or a spoon.
Let the mixture sit for about 5–10 minutes.
This is an important step because the salt naturally draws some moisture out of the onions. That moisture will help bring the mixture together without requiring a large amount of water.
Step 3: Add the Chickpea Flour
Add the chickpea flour and rice flour to the seasoned onions.
Mix well until the flour coats the onion slices.
At first, the mixture may look quite dry. Don’t immediately add a lot of water. Continue mixing for a minute or two and allow the moisture released by the onions to combine with the flour.
If the mixture still feels too dry to hold together, add water one tablespoon at a time.
The finished mixture should be thick and sticky, with the onion slices coated in a light layer of batter. It should not resemble a smooth pancake batter.
