Oven Baked Boneless Chicken Thighs: A Juicy Step-by-Step Dinner Recipe
Oven baked boneless chicken thighs are one of the easiest and most reliable chicken recipes you can make at home. They are tender, flavorful, affordable, and much harder to dry out than chicken breast. With the right seasoning and baking method, boneless chicken thighs come out juicy inside, golden outside, and full of savory flavor.
This recipe is perfect for weeknight dinners, meal prep, rice bowls, salads, wraps, pasta, or serving with potatoes and vegetables. The method is simple: season the chicken well, let it rest briefly, bake it at a high temperature, and finish it with a short rest before serving.
Why Boneless Chicken Thighs Are Great for Baking
Boneless chicken thighs have more natural fat than chicken breast, which helps them stay moist in the oven. They also absorb marinades and seasonings very well. Because they are boneless, they cook faster than bone-in thighs, making them a practical choice for quick dinners.
The best oven baked chicken thighs should have three things: deep seasoning, juicy texture, and lightly caramelized edges. A hot oven helps create that golden surface without overcooking the meat.
Ingredients
For the Chicken
- 2 pounds boneless skinless chicken thighs
- 2 tablespoons olive oil
- 1 tablespoon lemon juice or apple cider vinegar
- 1 tablespoon soy sauce or Worcestershire sauce
- 1 tablespoon brown sugar or honey
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon dried thyme
- ½ teaspoon dried oregano
- ½ teaspoon chili powder or cayenne pepper, optional
- 2 tablespoons chopped parsley for garnish
Optional Additions
- 2 minced garlic cloves
- 1 tablespoon Dijon mustard
- ½ teaspoon smoked paprika
- 1 tablespoon melted butter for brushing after baking
Step 1: Prepare the Chicken
Remove the chicken thighs from the package and pat them dry with paper towels. This is an important step because excess moisture prevents the chicken from browning properly.
Trim off any large pieces of extra fat if needed, but do not remove every bit of fat. A small amount helps keep the chicken juicy and adds flavor during baking.
Place the chicken thighs in a large bowl.
Step 2: Make the Seasoning Mixture
In a small bowl, mix olive oil, lemon juice, soy sauce or Worcestershire sauce, brown sugar or honey, salt, black pepper, paprika, garlic powder, onion powder, thyme, oregano, and chili powder if using.
Stir until the mixture becomes a thick, flavorful marinade.
The oil helps the seasonings stick to the chicken. The lemon juice adds brightness. The brown sugar or honey helps the chicken caramelize in the oven. The paprika gives color, while garlic and onion powder create a deep savory taste.
Step 3: Season the Chicken Well
Pour the marinade over the chicken thighs.
Use your hands or tongs to coat every piece evenly. Make sure the seasoning reaches all sides of the chicken.
If you have time, cover the bowl and let the chicken marinate for 30 minutes. For deeper flavor, marinate it in the refrigerator for 2 to 8 hours.
If you are in a hurry, you can bake the chicken immediately after seasoning. Boneless thighs still taste good even with a short seasoning time.
