Oven Roasted Smoked Sausage and Potatoes

 

Instructions

  1. Preheat your oven to 400°F (200°C).

  2. Line a large baking sheet with aluminum foil and lightly coat it with cooking spray. Set aside.

  3. Slice the smoked turkey sausage into chunky rounds.

  4. Roughly chop the onion into large pieces.

  5. Rinse the baby potatoes and pat them dry. Cut each potato in half.

  6. In a spacious mixing bowl, combine the sausage, onions, and halved potatoes.

  7. Drizzle olive oil over the mixture and toss everything together to ensure an even coat.

  8. In a small bowl, mix together the salt, pepper, smoked paprika, and Cajun seasoning. Sprinkle this spice blend over the sausage and potatoes, then toss again to distribute the flavors evenly.

  9. Spread the seasoned sausage and potatoes in a single layer on the prepared baking sheet.

  10. Roast in the preheated oven for 55 minutes, stirring halfway through for even cooking.

  11. Check the potatoes by piercing one with a fork—it should slide in easily when fully tender. If needed, roast for an additional 5 minutes.

  12. Serve hot and enjoy the flavorful, smoky goodness!
