Pan-Fried Seafood Cakes: Crispy, Golden, and Packed With Flavor
Pan-Fried Seafood Cakes are a delicious way to turn tender seafood into a satisfying meal with a beautifully crisp exterior and a flavorful, delicate center. They are quick enough for a weeknight dinner but special enough to serve as an appetizer, brunch dish, or light lunch.
The secret to great seafood cakes is balance. You want enough seafood to make every bite flavorful, while breadcrumbs and a few simple ingredients provide just enough structure to keep the cakes together without making them heavy. A quick pan-fry gives them a golden crust while keeping the inside moist and tender.
This recipe works especially well with a combination of shrimp, crab, white fish, or other cooked seafood. You can also adapt the seasonings to make the cakes more citrusy, herby, spicy, or savory.
Why You’ll Love These Seafood Cakes
These seafood cakes have several things going for them:
- Crispy on the outside: Pan-frying creates a golden, lightly crunchy crust.
- Tender inside: The seafood remains the star of the dish.
- Easy to customize: You can use different seafood and seasonings.
- Quick to prepare: Most of the work involves simply mixing and shaping.
- Perfect for many occasions: Serve them as an appetizer, lunch, dinner, or party snack.
- Great with sauces: A creamy, tangy, or spicy dipping sauce complements the seafood beautifully.
Ingredients
For approximately 8 seafood cakes, you will need:
- 1 pound cooked seafood, such as crab meat, shrimp, or a mixture of seafood
- 2 large eggs
- ¾ cup breadcrumbs, plus extra if needed
- ¼ cup mayonnaise
- 2 tablespoons finely chopped fresh parsley
- 2 green onions, finely sliced
- 1 teaspoon Dijon mustard
- 1 teaspoon lemon juice
- 1 small garlic clove, finely minced
- ½ teaspoon paprika
- ¼ teaspoon black pepper
- ¼ teaspoon salt, or to taste
- 2 tablespoons grated Parmesan cheese, optional
- 2–3 tablespoons cooking oil for frying
Optional Additions
For extra flavor, you can add:
- A pinch of cayenne pepper for heat
- A little Old Bay-style seafood seasoning
- Finely chopped celery for crunch
- Fresh dill or cilantro
- A small amount of finely diced red bell pepper
- Lemon zest for a brighter citrus flavor
Step 1: Prepare the Seafood
If you are using cooked seafood, make sure it has been thoroughly drained and cooled before making the cakes.
For larger pieces of seafood, gently chop them into smaller chunks. Avoid turning everything into a paste. A mixture with some visible pieces of seafood gives the cakes a much better texture.
If using shrimp, chop most of the shrimp into small pieces while leaving a few slightly larger pieces for texture.
If your seafood contains excess moisture, gently pat it dry with paper towels. This is important because watery seafood can make the mixture too loose and difficult to shape.
Step 2: Make the Binding Mixture
In a large mixing bowl, whisk together the eggs and mayonnaise until smooth.
Add the Dijon mustard, lemon juice, minced garlic, paprika, black pepper, and salt. Stir until everything is evenly combined.
The mayonnaise adds richness while the mustard and lemon help brighten the seafood’s natural flavor.
Step 3: Add the Seafood and Seasonings
Add the prepared seafood to the bowl.
Next, add the chopped parsley and green onions. If you’re using Parmesan cheese, add it at this stage as well.
Gently fold everything together with a spatula or wooden spoon. Try not to overmix because breaking the seafood down too much can result in dense cakes.
