Pecan Cheesecake Pie

 

Instructions

  1. Preheat Oven:
    Set the oven to 350°F (175°C) and prepare a pie pan by greasing it lightly or lining it with parchment paper.

  2. Prepare the Crust:
    Place the pie crust in the pan and crimp the edges. Chill in the refrigerator while preparing the filling.

  3. Make the Cheesecake Layer:
    In a mixing bowl, beat the softened cream cheese with sugar for 2 minutes until smooth. Add the egg and vanilla extract, mixing until fully incorporated. Pour this mixture over the chilled pie crust and spread evenly.

  4. Prepare the Pecan Layer:
    In another bowl, combine the corn syrup, sugar, melted butter, eggs, and vanilla. Stir in the pecans. Pour this mixture over the cheesecake layer, spreading evenly.

  5. Bake:
    Cover the edges of the pie with foil to prevent over-browning. Bake for 50–60 minutes, or until the filling is set and the pecan topping is golden brown.

  6. Cool:
    Allow the pie to cool completely on a wire rack for at least 2 hours before serving. Optionally, drizzle with condensed milk once cooled.
