Layer the Ingredients

Place sauerkraut in the bottom of the crockpot.

Top with potato chunks, then layer sausage pieces over the potatoes.

Prepare the Broth

In a small bowl, mix chicken broth with caraway seeds and bay leaf.

Pour evenly over the sausage, potatoes, and sauerkraut.

Season with salt and pepper to taste.

Cover and cook on HIGH for 4 hours (or on LOW for 7–8 hours) until potatoes are tender and flavors are well combined.
