
Quiche Lorraine: A Detailed Step-by-Step Guide to a Classic French Savory Tart
Quiche Lorraine is a classic French dish made with a buttery pastry crust, smoky bacon, creamy egg custard, and a golden baked top. It is simple, elegant, and full of rich flavor. Although it looks like a fancy brunch recipe, Quiche Lorraine is actually very easy to prepare at home when you follow the method carefully.
This savory tart can be served for breakfast, brunch, lunch, dinner, holidays, or family gatherings. It tastes delicious warm, but it can also be served at room temperature, which makes it perfect for parties or meal prep.
What Is Quiche Lorraine?
Quiche Lorraine comes from the Lorraine region of France. The traditional version was made with pastry, eggs, cream, and bacon. Modern versions often include cheese, especially Gruyère, Swiss cheese, or Emmental. The result is a rich, creamy, smoky tart with a crisp crust and soft custard filling.
A good Quiche Lorraine should not be dry or rubbery. The filling should be smooth and creamy, while the crust should stay flaky and firm enough to hold each slice.
Ingredients
For the Crust
- 1 ¼ cups all-purpose flour
- ½ teaspoon salt
- ½ cup cold unsalted butter, cut into cubes
- 3 to 4 tablespoons ice-cold water
For the Filling
- 6 to 8 slices bacon, chopped
- 1 cup shredded Gruyère cheese, Swiss cheese, or Emmental
- 4 large eggs
- 1 cup heavy cream
- ½ cup whole milk
- ¼ teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon ground nutmeg
- 1 small onion or shallot, finely chopped, optional
Step 1: Prepare the Pastry Dough
Start by making the crust. In a large bowl, mix the flour and salt. Add the cold butter cubes and rub them into the flour using your fingertips or a pastry cutter.
Continue mixing until the flour looks like coarse crumbs. Some small pieces of butter should still remain. These butter pieces help create a flaky crust during baking.
Add ice-cold water one tablespoon at a time. Mix gently until the dough just begins to come together. Do not knead it too much, because overworking the dough can make the crust tough.
Shape the dough into a flat disc, wrap it in plastic wrap, and refrigerate it for at least 30 minutes.
Step 2: Roll Out the Crust
Lightly flour your work surface and roll the chilled dough into a circle large enough to fit a 9-inch pie dish or tart pan.
Carefully place the dough into the pan. Press it gently into the bottom and sides. Trim any extra dough from the edges.
Use a fork to prick the bottom of the crust. This helps prevent the pastry from puffing up while baking.
Place the prepared crust in the refrigerator for another 15 minutes. Chilling helps the crust keep its shape in the oven.
Step 3: Blind Bake the Crust
Preheat the oven to 375°F / 190°C.
Line the crust with parchment paper and fill it with pie weights, dried beans, or uncooked rice. This keeps the crust flat while it bakes.
Bake for 15 minutes. Then remove the parchment paper and weights. Return the crust to the oven and bake for another 8 to 10 minutes, until it looks lightly golden.
Blind baking is important because the quiche filling is wet. This step keeps the bottom crust from becoming soggy.
