There is something wonderfully convenient about letting a slow cooker handle dinner while you take care of everything else. Raw pork tenderloin in a slow cooker is an especially simple option: a few basic ingredients, a flavorful seasoning blend, and several hours of gentle cooking can turn a fresh pork tenderloin into a tender centerpiece for a comforting meal.
Pork tenderloin is naturally lean and mild, so the key is building plenty of flavor around it while making sure it reaches a safe internal temperature. This recipe uses garlic, herbs, broth, and a lightly sweet and savory sauce to keep the pork flavorful and moist.
Why Make Pork Tenderloin in a Slow Cooker?
Slow cooking is convenient because it requires very little hands-on work. The pork gradually absorbs the flavors of the broth, seasonings, garlic, and sauce as it cooks.

Ingredients
- 1 to 1½ pounds raw pork tenderloin
- 1 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- ½ teaspoon dried rosemary
- 3 cloves garlic, minced
- 1 cup low-sodium chicken or vegetable broth
- 2 tablespoons honey
- 1 tablespoon Dijon mustard
- 1 tablespoon soy sauce
- 1 small onion, thinly sliced
- 1 tablespoon cornstarch
- 2 tablespoons cold water
Step 1: Prepare the Pork
Remove the pork tenderloin from its packaging and pat it dry with paper towels. This helps the seasonings adhere to the surface.
Trim away any excess visible fat or silver skin if necessary. Avoid cutting away too much of the meat because pork tenderloin is already quite lean.
Step 2: Season Generously
In a small bowl, combine the salt, black pepper, garlic powder, smoked paprika, thyme, and rosemary.
Rub the seasoning mixture evenly over every side of the pork tenderloin.
For an even deeper flavor, let the seasoned pork sit for about 10–15 minutes while you prepare the remaining ingredients.
Step 3: Prepare the Slow Cooker
Place the sliced onion across the bottom of the slow cooker.
The onions create a flavorful base for the pork and help keep it slightly elevated from the bottom of the cooking vessel.
Add the minced garlic over the onions.
