Optional Additions

You can personalize your croquettes with ingredients such as:

  • Fresh dill
  • Finely chopped celery
  • A small amount of grated Parmesan cheese

Avoid adding too many wet ingredients, however, because an overly moist mixture can make the patties difficult to shape and more likely to fall apart during cooking.


How to Make Salmon Croquettes Step by Step

Step 1: Prepare the Salmon

Begin by draining the salmon thoroughly.

Place it in a large mixing bowl and gently break it apart with a fork. If your salmon contains skin or bones and you prefer a smoother texture, remove them at this stage. Small, soft salmon bones are edible, but removing them can give the croquettes a more uniform texture.

Do not mash the salmon into a completely smooth paste. Leaving some small pieces intact gives the finished croquettes a pleasant texture.


Step 2: Add the Vegetables

Add the finely diced onion and bell pepper to the salmon.

The vegetables provide freshness, mild sweetness, and a little crunch. Make sure they are diced quite small so they incorporate evenly into the mixture and don’t cause the croquettes to break apart.

If you prefer a softer vegetable texture, you can sauté the onion and bell pepper for a few minutes before adding them to the salmon. Allow them to cool slightly before mixing.

Step 4: Check the Consistency

This is an important step.

The mixture should be moist enough to hold together when pressed but not so wet that it sticks heavily to your hands.

Take a small amount and gently squeeze it together. If it forms a firm little ball without crumbling, the consistency is right.

If the mixture seems too wet, add another tablespoon or two of breadcrumbs. If it seems unusually dry and crumbly, add a very small amount of mayonnaise.
