Salmon Patties — Crispy, Tender, and Full of Flavor

There’s something wonderfully comforting about a plate of homemade salmon patties. They’re crispy and golden on the outside, tender and savory in the center, and made with simple ingredients that you may already have in your pantry.

Whether you’re looking for an easy weeknight dinner, a budget-friendly seafood meal, or a delicious way to turn canned salmon into something special, these salmon patties are a great choice. A few fresh ingredients add brightness and flavor, while breadcrumbs help create a beautifully crisp crust when the patties are pan-fried.

Serve them with a fresh salad, roasted vegetables, mashed potatoes, rice, or your favorite dipping sauce for a satisfying meal.

Why You’ll Love These Salmon Patties

These patties are especially useful when you want something delicious without spending a lot of time in the kitchen.

  • Simple ingredients: Canned salmon makes preparation quick and convenient.
  • Crispy exterior: Pan-frying gives the patties a wonderfully golden crust.
  • Tender center: The mixture stays moist and flavorful inside.
  • Easy to customize: Add your favorite herbs, spices, or seasonings.
  • Great for leftovers: They reheat well and make an excellent next-day lunch.

Ingredients

For about 8 medium salmon patties, you’ll need:

  • 2 cans (14.75 ounces each) salmon, drained
  • 2 large eggs
  • ¾ cup plain breadcrumbs
  • ¼ cup finely diced onion
  • 2 tablespoons finely chopped fresh parsley
  • 1 tablespoon mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ¼ teaspoon black pepper
  • ½ teaspoon salt, or to taste
  • 2–3 tablespoons vegetable or olive oil, for frying

Optional Additions

For a little extra flavor, you can add:

  • A pinch of cayenne pepper for gentle heat
  • A little finely chopped green onion
  • ½ teaspoon dried dill
  • A dash of hot sauce
  • A small amount of grated Parmesan cheese

Step 1: Prepare the Salmon

Drain the canned salmon thoroughly. Excess liquid can make the mixture too soft and difficult to shape.

Place the salmon in a large mixing bowl and gently break it apart with a fork. If your canned salmon contains skin or bones and you prefer not to use them, remove them before continuing. The goal is to create small, evenly distributed pieces without turning the salmon into a completely smooth paste.

Step 2: Add the Flavor

Add the diced onion, chopped parsley, mayonnaise, Dijon mustard, lemon juice, garlic powder, paprika, black pepper, and salt.

Gently mix everything together with a fork or spatula.

The lemon juice adds a fresh note that balances the richness of the salmon, while Dijon mustard gives the patties a subtle savory kick.
