Step 1: Prepare the Oysters
Start by draining the oysters through a fine strainer placed over a bowl. Do not throw away the oyster liquid. This liquid, often called oyster liquor, has a natural seafood flavor that makes the casserole taste richer.
Check the oysters carefully for any tiny shell pieces. If needed, gently rinse them with a small amount of cold water, but avoid over-rinsing because you do not want to wash away all their natural flavor.
