Seafood Gratin Casserole: A Creamy, Golden, Comforting Seafood Bake

Seafood Gratin Casserole is a rich and elegant baked dish made with tender seafood, a creamy white sauce, vegetables, cheese, and a golden breadcrumb topping. It is the kind of recipe that feels special enough for holidays or dinner guests, but it can still be prepared at home with simple ingredients and clear steps.

The word “gratin” usually means a dish baked with a browned topping, often made from cheese, breadcrumbs, or both. In this recipe, shrimp, fish, scallops, or crab are folded into a creamy sauce, placed in a baking dish, covered with cheese and breadcrumbs, then baked until bubbling and golden brown.

This casserole is warm, creamy, savory, and full of seafood flavor. It can be served as a main dish with rice, pasta, crusty bread, salad, or roasted vegetables.

Ingredients

For the Seafood

  • 300 g shrimp, peeled and deveined
  • 250 g white fish fillet, cut into chunks
  • 200 g scallops or crab meat, optional
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 1 tablespoon lemon juice

For the Creamy Sauce

  • 3 tablespoons butter
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 cup seafood stock or chicken broth
  • 1 cup milk
  • ½ cup heavy cream
  • ½ cup grated parmesan cheese
  • ½ cup shredded mozzarella or Gruyère cheese
  • ½ teaspoon Dijon mustard, optional
  • ½ teaspoon dried thyme or Italian seasoning
  • Salt and black pepper to taste

For the Vegetables

  • ½ cup mushrooms, sliced
  • ½ cup spinach, chopped
  • ½ cup peas or corn, optional
  • 1 small carrot, finely diced, optional

For the Topping

  • ¾ cup breadcrumbs or panko breadcrumbs
  • ¼ cup grated parmesan cheese
  • 2 tablespoons melted butter
  • 1 tablespoon chopped parsley
  • A pinch of paprika

Step 1: Prepare the Seafood

Start by patting the seafood dry with paper towels. This is important because seafood releases moisture while cooking, and too much liquid can make the casserole watery.

Cut the fish into medium pieces. Keep the shrimp whole if they are small, or cut them in half if they are large.

Season the seafood with salt, black pepper, paprika, and lemon juice. Mix gently and set aside for a few minutes.

Do not marinate seafood for too long with lemon juice, because the acid can start to change the texture.

Step 2: Lightly Cook the Seafood

Heat butter and olive oil in a large skillet over medium heat.

Add the shrimp and fish pieces. Cook for only 2 to 3 minutes, just until the shrimp begins to turn pink and the fish starts to firm up.

If using scallops, add them at the same time and cook briefly. If using cooked crab meat, do not cook it yet; add it later to the sauce.

Remove the seafood from the pan and set it aside.

The seafood does not need to be fully cooked at this stage because it will continue baking in the oven. Overcooking it now can make it rubbery.

Step 3: Cook the Vegetables

In the same skillet, add a little more butter if needed.

Add the chopped onion and cook for 2 to 3 minutes until soft. Add the garlic and stir for about 30 seconds.

Add mushrooms, carrots, peas, corn, or any vegetables you are using. Cook for a few minutes until they soften slightly.

If using spinach, add it last and cook just until wilted.

The vegetables add flavor, color, and texture to the creamy casserole.
