Seafood Mac and Cheese

Step 3: Make the cheese sauce

  1. In a large saucepan or deep skillet, melt the butter over medium heat.
  2. Whisk in the flour and cook for about 1–2 minutes to form a roux, stirring constantly.
  3. Gradually whisk in the warm milk and cream until smooth.
  4. Cook for 3–5 minutes, stirring often, until the sauce thickens enough to coat the back of a spoon.
  5. Reduce heat to low. Stir in mustard, paprika, cayenne (if using), and all the cheeses, a handful at a time. Mix until completely melted and smooth.
  6. Season with salt and pepper to taste.

Step 4: Combine and assemble

  1. Fold the cooked pasta into the cheese sauce until well coated.
  2. Gently fold in the seafood, being careful not to break up the crab too much.
  3. Pour the mixture into a greased 9×13-inch (or similar) baking dish.

Step 5: Prepare the topping (optional)

  1. Mix panko, melted butter, and Parmesan in a bowl.
  2. Sprinkle evenly over the top of the pasta.

Step 6: Bake

  1. Preheat oven to 375°F (190°C).
  2. Bake uncovered for 20–25 minutes, or until the top is golden and the cheese is bubbling at the edges.
  3. Let rest for 5 minutes before serving.

🌿 Serving Suggestions:
Garnish with chopped parsley and a squeeze of lemon for brightness. Serve alongside a crisp green salad or steamed vegetables. A glass of chilled Chardonnay or Sauvignon Blanc pairs beautifully with this dish.

💡 Tips for Success:

  • Use a blend of flavorful and melty cheeses—sharp cheddar for flavor, mozzarella for stretch, and Parmesan for umami.
  • Do not overcook the seafood—underdone is better than rubbery.
  • For extra depth, add a splash of white wine or seafood stock to the cheese sauce before adding the cheese.

This Seafood Mac and Cheese is rich, decadent, and sure to impress. Whether you’re hosting a dinner party or indulging in a cozy night at home, it delivers big flavor and comfort in every bite.
