Sheet Pan Sausage & Caramelized Onion Bake
There’s something wonderfully comforting about a dinner that comes together on a single pan. This Sheet Pan Sausage & Caramelized Onion Bake combines juicy, savory sausage with deeply golden onions, tender vegetables, and a flavorful glaze that comes together as everything roasts.
The beauty of this recipe is that most of the work happens in the oven. The onions slowly soften and develop sweet, caramelized edges while the sausage browns and releases its savory juices into the vegetables. The result is a hearty meal with plenty of roasted flavor and very little cleanup.
It’s perfect for a busy weeknight, but it’s also cozy enough for a relaxed weekend dinner. Serve it with crusty bread, mashed potatoes, rice, or a simple green salad for a complete meal.

Ingredients
For the Bake
- 1 ½ pounds smoked sausage or Italian sausage, sliced into thick pieces
- 2 large yellow onions, thinly sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 pound baby potatoes, halved
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon dried Italian seasoning
- ½ teaspoon dried thyme
- ½ teaspoon salt
- ½ teaspoon freshly ground black pepper
- ¼ teaspoon red pepper flakes, optional
For the Onion Glaze
- 1 tablespoon Dijon mustard
- 1 tablespoon honey or maple syrup
- 1 tablespoon balsamic vinegar
- 2 tablespoons olive oil
- 1 teaspoon Worcestershire sauce
For Finishing
- 2 tablespoons chopped fresh parsley
- A little freshly grated Parmesan, optional
- Extra black pepper, to taste
Step-by-Step Method
Step 1: Prepare the Oven and Sheet Pan
Preheat your oven to 425°F (220°C).
Line a large rimmed sheet pan with parchment paper or lightly grease it with olive oil. Using a large pan is important because the ingredients need enough room to roast rather than steam.
If everything is crowded together, the vegetables will release moisture and may not develop those delicious browned edges.
Step 2: Prepare the Vegetables
Wash the baby potatoes thoroughly and cut them in half. If some potatoes are noticeably larger, cut them into quarters so that all the pieces cook at roughly the same rate.
Thinly slice the onions and cut the bell peppers into strips.
Add the potatoes, onions, and peppers to a large mixing bowl. Add the minced garlic, olive oil, smoked paprika, Italian seasoning, thyme, salt, black pepper, and red pepper flakes if using.
Toss everything thoroughly until the vegetables are evenly coated.
Step 3: Start Roasting the Vegetables
Spread the seasoned vegetables over the prepared sheet pan in as close to a single layer as possible.
Place the pan in the preheated oven and roast for approximately 20 minutes.
The potatoes need a head start because they take longer to become tender than the sausage and peppers.
After 20 minutes, remove the pan and give the vegetables a good toss.
