Slow Cooker BBQ Brisket and Baked Beans
There is something especially satisfying about a meal that fills the kitchen with the rich aroma of smoky barbecue while requiring very little hands-on work. Slow Cooker BBQ Brisket and Baked Beans is exactly that kind of comfort food. Tender beef brisket is slowly cooked until it becomes juicy and easy to pull apart, while creamy, savory baked beans soak up the flavors of barbecue sauce, brown sugar, and the brisket’s flavorful cooking juices.
This recipe is ideal for a relaxed weekend dinner, family gathering, game-day meal, or whenever you want hearty barbecue without having to fire up a smoker. The slow cooker does most of the work, giving the brisket plenty of time to become tender and allowing the beans to develop a deep, sweet-and-savory flavor.
Why This Recipe Works
Brisket is a flavorful cut of beef, but it contains connective tissue that needs time to break down. Cooking it slowly at a low temperature allows that connective tissue to soften gradually, resulting in meat that is tender rather than tough.
The baked beans complement the brisket beautifully. Their slightly sweet sauce balances the smoky, savory beef, while barbecue sauce ties the two components together into one cohesive meal.
For the best results, avoid rushing the cooking process. The goal is not simply to cook the brisket until it reaches a safe temperature; it is to cook it long enough for the meat to become genuinely tender.
Ingredients
For the Brisket
- 3 to 4 pounds beef brisket
- 2 teaspoons smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon chili powder
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon ground cumin
- 1 tablespoon brown sugar
- 1 tablespoon olive oil
- 1 small onion, thinly sliced
- 3 cloves garlic, minced
- 1 cup barbecue sauce
- 1/2 cup beef broth
- 2 tablespoons Worcestershire sauce
- 1 tablespoon apple cider vinegar
For the Baked Beans
- 3 cans (15 ounces each) navy beans or pinto beans, drained and rinsed
- 1/2 cup barbecue sauce
- 1/4 cup brown sugar
- 2 tablespoons ketchup
- 1 tablespoon yellow mustard
- 1 tablespoon Worcestershire sauce
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon black pepper
- 1/2 cup of the brisket’s cooking liquid, added later as needed
Step 1: Prepare the Brisket
Start by trimming the brisket if necessary. Remove any particularly thick pieces of hard fat, but leave a thin layer of fat over the meat. That layer can help protect the brisket during the long cooking process and contributes flavor.
Pat the brisket dry with paper towels. This helps the seasoning adhere properly.
In a small bowl, combine the smoked paprika, garlic powder, onion powder, chili powder, salt, black pepper, cumin, and brown sugar.
Rub the brisket all over with olive oil, then coat it generously with the seasoning mixture. Press the spices into the meat so that the entire surface is covered.
Step 2: Build the Flavor Base
Place the sliced onion and minced garlic in the bottom of the slow cooker.
In a separate bowl, whisk together the barbecue sauce, beef broth, Worcestershire sauce, and apple cider vinegar.
The vinegar adds a subtle acidity that helps balance the sweetness of the barbecue sauce, while the Worcestershire sauce contributes extra savory depth.
Pour about half of this mixture over the onions and garlic.
Step 3: Add the Brisket
Place the seasoned brisket into the slow cooker with the fat side facing upward when possible.
Pour the remaining barbecue mixture over the meat.
The liquid does not need to completely cover the brisket. A slow cooker traps moisture, so the meat will cook in a combination of gentle heat, steam, and flavorful cooking juices.
Cover the slow cooker with its lid.
