Slow Cooker Beef Tips and Egg Noodles

There is something especially comforting about a meal that practically cooks itself. Slow Cooker Beef Tips and Egg Noodles is one of those cozy dinners that fills the kitchen with the rich aroma of tender beef, savory gravy, and herbs while everything slowly comes together.

The beef tips cook low and slow until they become wonderfully tender, while the flavorful gravy develops a deep, hearty taste. Served over buttery egg noodles, the result is a simple but satisfying meal that feels like classic home cooking.

This recipe is especially useful on busy days because most of the work happens before the slow cooker takes over. By the time dinner rolls around, all you need to do is prepare the noodles and bring everything together.

Why You’ll Love This Recipe

  • Easy preparation: The slow cooker does most of the work.
  • Tender beef: A long, gentle cooking time helps create fork-tender beef.
  • Rich homemade-style gravy: Beef broth, seasonings, and savory aromatics create a comforting sauce.
  • Family-friendly: The mild, hearty flavors pair beautifully with egg noodles.
  • Great for leftovers: The flavors often become even better after resting overnight.

Ingredients

For the Beef Tips

  • 2 pounds beef stew meat or beef tips, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 small yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt, or to taste
  • 1 tablespoon tomato paste
  • 2 tablespoons cornstarch
  • 3 tablespoons cold water

For the Egg Noodles

  • 12 ounces wide egg noodles
  • 2 tablespoons butter
  • Salt, as needed
  • Fresh parsley, chopped, for garnish

Step-by-Step Method

Step 1: Prepare the Beef

Pat the beef pieces dry with paper towels. Removing excess moisture helps the beef brown more effectively if you choose to sear it first.

Season the beef lightly with salt and black pepper.

For an extra layer of flavor, heat the olive oil in a large skillet over medium-high heat. Add the beef in batches rather than crowding the pan. Brown the pieces for a couple of minutes on each side.

The beef does not need to be cooked through at this point. You are simply developing a browned exterior that will add additional depth to the finished dish.

Transfer the browned beef to the slow cooker.

Shortcut: If you are short on time, you can skip the browning step and place the seasoned beef directly into the slow cooker. The finished dish will still be delicious, although the flavor will be slightly different.

Step 2: Add the Aromatics

Add the chopped onion and minced garlic around the beef.

Sprinkle in the dried thyme, dried parsley, onion powder, and garlic powder.

Add the tomato paste and Worcestershire sauce.

These ingredients may seem simple, but they help create the savory foundation of the gravy.

Step 3: Pour in the Beef Broth

Slowly pour the beef broth into the slow cooker.

Use a wooden spoon or spatula to gently stir the ingredients so the seasonings and tomato paste distribute throughout the liquid.

The broth should surround the beef without completely drowning everything in liquid.

Step 4: Slow Cook the Beef

Cover the slow cooker with its lid.

Cook on LOW for approximately 6–8 hours, or until the beef is tender.

You can also cook it on HIGH for approximately 3–4 hours, although the low-and-slow method is generally preferable when you want especially tender beef.

Try to avoid repeatedly lifting the lid during cooking. Each time the lid is removed, heat escapes and the cooking process can be slowed down.
