Slow Cooker Braised Cabbage and Bacon

A rich, comforting dish with deep flavor and effortless preparation

There’s something incredibly satisfying about transforming humble ingredients into a dish that feels hearty, rustic, and full of flavor. Slow Cooker Braised Cabbage and Bacon is exactly that kind of recipe. It takes simple pantry staples—cabbage, bacon, onions—and slowly cooks them into a tender, savory side (or even main dish) that melts in your mouth.

This dish is especially loved for its balance: the natural sweetness of cabbage, the smoky saltiness of bacon, and the gentle richness that develops during slow cooking. Best of all, it requires minimal effort—just a bit of prep and your slow cooker does the rest.

Ingredients You’ll Need

  • 1 large green cabbage (about 1.5–2 kg), cored and sliced
  • 200–250 g bacon (thick-cut preferred), chopped
  • 1 large onion, thinly sliced
  • 2–3 cloves garlic, minced
  • 1 cup chicken broth
  • 2 tablespoons butter
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar (optional, balances flavor)
  • Salt and black pepper, to taste
  • Optional: pinch of red pepper flakes for a slight kick

Step-by-Step Method

Step 1: Prepare the Ingredients

Start by removing the outer leaves of the cabbage, then cut it into quarters. Remove the tough core and slice the cabbage into thick ribbons. Don’t worry about perfection—rustic cuts work beautifully here.

Slice the onion and mince the garlic. Cut the bacon into bite-sized pieces.

Step 2: Cook the Bacon

In a skillet over medium heat, cook the chopped bacon until it starts to crisp and release its fat. This step is important because it builds a deep smoky flavor that will infuse the entire dish.

Once done, transfer the bacon to a plate, but keep about 1–2 tablespoons of the bacon fat in the pan.
