Step 1: Prepare the Pork Shanks

Begin by patting the pork shanks thoroughly dry with paper towels. Removing excess moisture helps them develop a beautiful browned exterior when seared.

Season all sides generously with salt, black pepper, smoked paprika, and dried thyme. Make sure the seasoning is pressed gently into the meat so that every bite is flavorful.

Let the seasoned pork sit at room temperature for about 15–20 minutes while you prepare the vegetables.

Step 2: Sear the Pork

Heat the olive oil in a large, heavy-bottomed skillet or Dutch oven over medium-high heat.

Once the oil is hot, carefully place the pork shanks into the pan. Avoid overcrowding them; if necessary, sear them in batches.
