Slow Cooker Brown Sugar Garlic Pork Chops: A Tender Sweet-and-Savoury Dinner Recipe
Slow Cooker Brown Sugar Garlic Pork Chops are a rich, comforting dish made with tender pork chops cooked slowly in a glossy sauce of brown sugar, garlic, butter, soy sauce, broth, and warm seasonings. The slow cooker does most of the work, turning simple pork chops into a juicy, flavourful meal with a sweet, savoury, garlicky glaze.
This recipe is perfect for busy days because it requires only a short preparation time. Once everything is layered in the slow cooker, the pork cooks gently until it becomes soft and full of flavour. The sauce thickens at the end into a delicious glaze that can be spooned over mashed potatoes, rice, vegetables, or noodles.
Why This Recipe Works
Pork chops can become dry if cooked too quickly or at too high a temperature. The slow cooker helps keep them moist by cooking them gently in sauce. Brown sugar adds sweetness and helps create a sticky glaze, while garlic gives the dish a deep savoury flavour. Soy sauce adds saltiness and richness, and butter makes the sauce smooth.
The result is a balanced dish: slightly sweet, slightly salty, buttery, garlicky, and very tender.

- 4 to 6 pork chops, bone-in or boneless

- 4 to 5 garlic cloves, minced
- ½ cup chicken broth
- ¼ cup soy sauce
- 2 tablespoons butter, melted
- 1 tablespoon Worcestershire sauce
- 1 tablespoon apple cider vinegar
- ½ teaspoon dried thyme or Italian seasoning
- ¼ teaspoon chilli flakes, optional
For Thickening the Sauce
- 1 tablespoon cornflour
- 2 tablespoons cold water
Optional Garnish
- Chopped parsley
- Green onions
- Extra black pepper
- Sesame seeds
Step 1: Choose the Right Pork Chops
You can use boneless or bone-in pork chops for this recipe.
Bone-in pork chops usually stay juicier and have more flavour. Boneless pork chops are easier to serve and cook slightly faster. Thick-cut pork chops work best because they are less likely to dry out during slow cooking.
Try to use pork chops that are about 1 inch thick. Very thin pork chops may become too soft or dry if cooked for too long.
Step 2: Season the Pork Chops
Pat the pork chops dry with paper towels. This helps the seasoning stick better.
Sprinkle both sides with salt, black pepper, paprika, onion powder, and garlic powder.
Rub the seasoning gently into the meat so each pork chop is evenly coated.
This first layer of seasoning gives the pork flavour before it even goes into the sauce.
Step 3: Sear the Pork Chops for Extra Flavour
This step is optional, but it makes the dish taste better.
Heat olive oil or butter in a skillet over medium-high heat. Add the pork chops and sear them for 1 to 2 minutes on each side, just until lightly browned.
You do not need to cook them fully. The goal is only to create a golden surface.
Searing adds deeper flavour and helps the pork look more appetising after slow cooking. If you are short on time, you can skip this step and place the seasoned pork chops directly into the slow cooker.
