Slow Cooker Cabbage and Potatoes: A Comforting Step-by-Step Homestyle Recipe

Slow Cooker Cabbage and Potatoes is a simple, hearty, and budget-friendly dish made with tender cabbage, soft potatoes, onion, garlic, butter, and savory seasonings. It is the kind of recipe that feels warm and comforting without needing much effort. Everything cooks slowly together until the vegetables become flavorful, soft, and slightly buttery.

This dish can be served as a main meal, a side dish, or a comforting family dinner. It pairs beautifully with smoked sausage, ham, bacon, roasted chicken, cornbread, or crusty bread. The slow cooker makes the process easy because it allows the cabbage and potatoes to absorb the seasoning while becoming tender without constant stirring.

Why This Recipe Works

Cabbage and potatoes are simple ingredients, but when cooked slowly, they become rich and satisfying. The cabbage softens and turns slightly sweet, while the potatoes become creamy and absorb the broth, butter, garlic, and spices.

The slow cooker is perfect for this dish because it cooks everything gently. Instead of boiling the vegetables too quickly, it lets the flavors develop slowly. The result is a rustic, homestyle dish with deep flavor and very little hands-on work.

Ingredients

Main Ingredients

  • 1 medium head of cabbage
  • 5 to 6 medium potatoes
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 3 tablespoons butter
  • 2 tablespoons olive oil
  • 1 ½ cups chicken broth or vegetable broth
  • 1 teaspoon salt, or to taste
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried thyme
  • ¼ teaspoon red pepper flakes, optional

Optional Add-Ins

  • 1 pound smoked sausage, sliced
  • 4 slices cooked bacon, crumbled
  • 1 cup diced ham
  • 1 carrot, sliced
  • 1 tablespoon apple cider vinegar
  • Fresh parsley for garnish

Step 1: Prepare the Cabbage

Start by removing any damaged outer leaves from the cabbage.

Cut the cabbage in half, then cut out the tough core. Slice the cabbage into thick strips or large chunks. Do not cut it too finely because cabbage shrinks a lot while cooking.

Place the chopped cabbage into a large bowl and rinse it well. Drain it completely before adding it to the slow cooker.

Step 2: Prepare the Potatoes

Wash the potatoes well. You can peel them if you prefer a smoother texture, or leave the skins on for a more rustic dish.

Cut the potatoes into medium chunks. Try to keep the pieces similar in size so they cook evenly.

If the potato pieces are too small, they may break apart during slow cooking. Medium chunks work best because they become tender but still hold their shape.

Step 3: Add the Vegetables to the Slow Cooker

Place half of the cabbage into the bottom of the slow cooker.

Add the potatoes, sliced onion, and minced garlic.

Then add the remaining cabbage on top.

Layering the ingredients helps everything cook evenly. Since cabbage takes up a lot of space at first, gently press it down to fit inside the slow cooker.
