Slow Cooker Creamy Ground Beef Casserole

Slow Cooker Creamy Ground Beef Casserole: A Cozy Step-by-Step Dinner Recipe

Slow Cooker Creamy Ground Beef Casserole is a warm, filling, and family-friendly dish made with seasoned ground beef, tender pasta or potatoes, creamy sauce, melted cheese, and simple vegetables. It is the kind of recipe that feels like comfort food but does not require much effort. After browning the beef and layering the ingredients, the slow cooker does most of the work.

This casserole is perfect for busy weeknights, meal prep, potlucks, cold evenings, or anytime you want a rich and satisfying homemade dinner. The flavor is savory, creamy, cheesy, and hearty, with a soft casserole texture that makes it easy to serve by the spoonful.

Why This Recipe Works

The slow cooker allows the ingredients to cook gently and absorb flavor. The ground beef brings richness, the cream sauce makes the dish smooth, and the cheese melts into the casserole to create a comforting texture.

Unlike oven casseroles, this version stays moist because it cooks slowly with broth, cream, and cheese. It is also flexible. You can make it with pasta, potatoes, rice, or egg noodles depending on what you have at home.

Ingredients

Main Ingredients

  • 1 ½ pounds ground beef
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon oil or butter
  • 2 cups uncooked pasta, egg noodles, or diced potatoes
  • 1 can cream of mushroom soup
  • 1 can cream of cheddar soup or cream of chicken soup
  • 1 cup beef broth
  • ½ cup sour cream
  • ½ cup heavy cream or milk
  • 1 ½ cups shredded cheddar cheese
  • ½ cup mozzarella cheese, optional
  • 1 cup frozen mixed vegetables, corn, peas, or green beans
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt, or to taste
  • 1 teaspoon Italian seasoning or dried parsley

Optional Toppings

  • Extra shredded cheese
  • Chopped parsley
  • Green onions
  • Crushed crackers
  • Crispy fried onions
  • Cooked bacon bits

Step 1: Brown the Ground Beef

Place a large skillet over medium-high heat. Add the ground beef and break it apart with a spoon.

Cook the beef until it is fully browned and no pink remains. This step gives the casserole better flavor and prevents the slow cooker from becoming greasy.

Drain the excess fat from the pan before moving to the next step.

Step 2: Add Onion and Garlic

Add the diced onion to the skillet with the cooked beef. Cook for 2 to 3 minutes until the onion becomes soft.

Add the minced garlic and cook for another 30 seconds, just until fragrant.

Do not cook the garlic too long because it can burn quickly and taste bitter.

Step 3: Season the Beef

Add Worcestershire sauce, paprika, garlic powder, onion powder, black pepper, salt, and Italian seasoning.

Stir well so the beef is evenly coated with the seasonings.

This gives the casserole a deeper, more savory flavor before it goes into the slow cooker.
