Slow Cooker Hamburger Steaks are a classic comfort-food meal made with seasoned ground beef patties slowly cooked in a rich onion gravy. The slow cooker makes the hamburger steaks tender, juicy, and deeply flavorful, while the gravy becomes thick, savory, and perfect for spooning over mashed potatoes, rice, egg noodles, or biscuits.
This recipe is ideal for busy days because most of the cooking happens gently in the slow cooker. After shaping and browning the patties, they simmer for hours in a flavorful gravy until they become soft, moist, and full of homemade flavor.
What Are Hamburger Steaks?
Hamburger steaks are seasoned ground beef patties cooked like small steaks. Unlike regular burgers, they are usually served without buns and are often covered with gravy, onions, or mushrooms.
In this slow cooker version, the patties are browned first to build flavor, then slowly cooked in gravy. This method keeps the meat tender and allows the sauce to soak into every bite.
Ingredients
For the Hamburger Steaks
- 2 pounds ground beef
- ½ cup breadcrumbs
- 1 large egg
- ¼ cup milk
- 1 small onion, finely grated or minced
- 2 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon paprika
- 1 tablespoon oil, for browning
For the Gravy
- 1 large onion, thinly sliced
- 2 cups beef broth
- 1 packet brown gravy mix
- 1 can cream of mushroom soup or cream of onion soup
- 1 tablespoon Worcestershire sauce
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon dried thyme, optional
- 1 cup sliced mushrooms, optional
For Thickening, If Needed
- 2 tablespoons cornstarch
- 2 tablespoons cold water
Step 1: Prepare the Beef Mixture
Place the ground beef in a large mixing bowl. Add breadcrumbs, egg, milk, minced onion, garlic, Worcestershire sauce, salt, black pepper, garlic powder, onion powder, and paprika.
Mix everything gently with your hands or a spoon until just combined.
Do not overmix the beef. Overmixing can make the hamburger steaks dense and tough. The mixture should hold together but still feel soft.
Step 2: Shape the Hamburger Steaks
Divide the beef mixture into 6 to 8 equal portions.
Shape each portion into an oval or round patty, about ¾ inch thick. Try to keep the patties similar in size so they cook evenly.
Press a small dent in the center of each patty with your thumb. This helps the patties keep their shape as they cook.
Step 3: Brown the Patties
Heat oil in a large skillet over medium-high heat.
Add the patties in batches and brown them for 2 to 3 minutes per side. They do not need to cook all the way through at this stage.
Browning adds flavor and helps the patties hold their shape in the slow cooker.
Once browned, transfer the patties to a plate.
