Slow Cooker Hamburger Steaks with Onion Gravy: A Comforting Step-by-Step Dinner Recipe
Slow Cooker Hamburger Steaks with Onion Gravy is a hearty comfort-food meal made with seasoned ground beef patties, slow-cooked onions, and a rich brown gravy. The hamburger steaks become tender as they cook slowly, while the onions soften and release their sweetness into the gravy. The result is a warm, savory dish that tastes homemade, filling, and perfect for family dinners.
This recipe is a great choice when you want the flavor of classic hamburger steaks without standing over the stove for a long time. After browning the patties, the slow cooker does most of the work. By the end, you get juicy beef patties covered in a thick onion gravy that pairs beautifully with mashed potatoes, rice, noodles, biscuits, or roasted vegetables.
Why This Recipe Works
Hamburger steaks are simple, but the slow cooker makes them extra tender. Browning the patties first gives them flavor and helps them hold their shape. Then, as they cook slowly in gravy, the beef absorbs the onion and broth flavors.
The onion gravy is the heart of the recipe. Sliced onions cook down until soft and sweet, while beef broth, Worcestershire sauce, and seasonings create a deep savory sauce. A little cornstarch or flour at the end thickens the gravy until it coats the hamburger steaks perfectly.
Ingredients
For the Hamburger Steaks
- 2 pounds ground beef
- ½ cup breadcrumbs
- 1 large egg
- ¼ cup milk
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- 1 tablespoon oil for browning
For the Onion Gravy
- 2 large onions, thinly sliced
- 2 tablespoons butter
- 2 ½ cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 tablespoon soy sauce, optional
- 1 teaspoon garlic powder
- ½ teaspoon black pepper
- ½ teaspoon dried thyme, optional
- 1 packet brown gravy mix, optional for extra flavor
- 2 tablespoons cornstarch
- 3 tablespoons cold water
Step 1: Prepare the Ground Beef Mixture
Place the ground beef in a large mixing bowl. Add the breadcrumbs, egg, milk, Worcestershire sauce, garlic powder, onion powder, salt, black pepper, and paprika.
Mix everything gently with your hands or a spoon. Do not overmix the beef. If you mix it too much, the hamburger steaks can become dense and tough.
The mixture should be moist enough to shape but firm enough to hold together.
Step 2: Shape the Hamburger Steaks
Divide the beef mixture into 6 to 8 equal portions.
Shape each portion into an oval or round patty, about ½ to ¾ inch thick. Press a small dent in the center of each patty with your thumb. This helps the patties stay flatter while cooking.
Try to keep the patties similar in size so they cook evenly in the slow cooker.
Step 3: Brown the Patties
Heat oil in a large skillet over medium-high heat.
Place the patties in the skillet and brown them for about 2 to 3 minutes per side. They do not need to cook fully at this stage. The goal is only to create a browned crust on the outside.
Browning adds flavor and helps the patties stay together while they slow cook.
Once browned, transfer the patties to a plate.
Step 4: Prepare the Onions
In the same skillet, add the butter.
Add the sliced onions and cook for 4 to 5 minutes until they begin to soften and turn lightly golden.
Stir often and scrape the bottom of the skillet to lift the browned beef bits. These bits add excellent flavor to the gravy.
The onions do not need to be fully caramelized because they will continue cooking in the slow cooker.
