Slow Cooker Smothered Cabbage with Bacon: A Southern-Style Comfort Recipe
Slow Cooker Smothered Cabbage with Bacon is a simple, hearty, and deeply flavorful side dish made with tender cabbage, smoky bacon, onion, garlic, butter, and savory seasonings. The cabbage cooks slowly until it becomes soft, rich, and full of smoky flavor from the bacon. It is an easy recipe that tastes comforting, homemade, and satisfying.
This dish is perfect with roasted chicken, fried chicken, pork chops, sausage, cornbread, rice, mashed potatoes, or beans. It can be served as a side dish, but it is also filling enough to enjoy as a simple meal.
Why This Recipe Works
Cabbage becomes sweeter and softer when cooked slowly. The slow cooker gives it time to absorb the bacon flavor, butter, broth, and seasonings. Instead of tasting plain, the cabbage becomes rich, tender, and slightly smoky.
The bacon adds saltiness and depth, while onion and garlic create a strong savory base. A small amount of broth helps the cabbage steam and soften without becoming dry.
Ingredients
Main Ingredients
- 1 large head of green cabbage
- 8 slices bacon, chopped
- 1 medium onion, sliced or diced
- 3 cloves garlic, minced
- 3 tablespoons butter
- ½ cup chicken broth
- 1 teaspoon salt, or to taste
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon smoked paprika
- ¼ teaspoon red pepper flakes, optional
- 1 teaspoon sugar, optional
- 1 tablespoon apple cider vinegar, optional
Optional Add-Ins
- Smoked sausage slices
- Diced potatoes
- Carrots
- Bell peppers
- Cajun seasoning
- Hot sauce
- Fresh parsley
Step 1: Prepare the Cabbage
Remove any damaged outer leaves from the cabbage.
Cut the cabbage into quarters and remove the hard core from the center. Then slice the cabbage into thick strips or chop it into bite-sized pieces.
Do not cut the cabbage too small, because it will shrink a lot while cooking. A large head of cabbage may look like too much at first, but it becomes much smaller after it softens.
Rinse the cabbage well and drain it completely.
Step 2: Cook the Bacon
Place the chopped bacon in a skillet over medium heat.
Cook until the bacon becomes browned and slightly crisp. Stir often so the pieces cook evenly.
Once cooked, remove the bacon with a slotted spoon and place it on a plate.
Keep about 2 tablespoons of bacon grease in the skillet. This bacon grease will be used to cook the onion and garlic, adding extra smoky flavor to the dish.
Step 3: Sauté the Onion and Garlic
Add the sliced onion to the skillet with the bacon grease.
Cook for 3 to 4 minutes until the onion becomes soft and lightly golden.
Add the minced garlic and cook for another 30 seconds. Stir constantly so the garlic does not burn.
This step gives the cabbage a better flavor than adding raw onion and garlic directly to the slow cooker.
