Slow Cooker Sour Cream Noodles

Slow Cooker Sour Cream Noodles: Creamy, Comforting, and Effortlessly Delicious

Slow Cooker Sour Cream Noodles are the kind of comfort food that proves a satisfying meal does not need to be complicated. With tender noodles coated in a rich, creamy sour cream sauce, this dish is warm, filling, and easy enough for a busy weeknight.

The slow cooker allows the flavors of the sauce to blend gradually while keeping preparation simple. The key is to prepare the creamy base first, then add the noodles near the end so they remain soft without becoming mushy.

This recipe works well as a cozy main dish, but it can also be served as a creamy side alongside roasted chicken, beef, meatballs, or vegetables.

Ingredients

For approximately 6 servings, you will need:

  • 12 ounces egg noodles
  • 2 cups sour cream
  • 8 ounces cream cheese, softened
  • 1 cup cottage cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup milk
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon paprika
  • Extra shredded cheese for topping, optional
  • Fresh parsley or chopped green onions for garnish, optional

Step 1: Prepare the Slow Cooker

Begin by lightly greasing the inside of your slow cooker with butter, cooking spray, or a small amount of oil.

This simple step prevents the creamy sauce from sticking heavily to the sides and makes cleanup considerably easier.

A 4- to 6-quart slow cooker works well for this recipe.

Step 2: Make the Creamy Sour Cream Mixture

Place the softened cream cheese into a large mixing bowl.

Add the sour cream and cottage cheese. Stir everything together until the mixture becomes relatively smooth and evenly combined.

Next, pour in the milk. The milk loosens the mixture slightly, helping it spread around the noodles later without becoming excessively thick.

Add the garlic powder, onion powder, salt, black pepper, dried parsley, and paprika.

Mix thoroughly.

The result should be a thick but creamy sauce with a mild tanginess from the sour cream and a rich texture from the cream cheese.

Step 3: Add the Cheese

Stir the shredded cheddar and Parmesan into the sour cream mixture.

Cheddar gives the noodles a familiar creamy, savory flavor, while Parmesan adds extra saltiness and depth.

You can adjust the cheese according to your preference. Monterey Jack, mozzarella, Colby Jack, or a combination of cheeses can also work.

Step 4: Transfer the Sauce to the Slow Cooker

Pour the prepared creamy mixture into the greased slow cooker.

Cut the butter into several small pieces and distribute them over the sauce.

Cover the slow cooker and cook on LOW for approximately 1 1/2 to 2 hours.

During this time, the cream cheese and shredded cheese will melt more completely, and the seasonings will blend into the sauce.

Stir the mixture once or twice if possible.

Avoid cooking the dairy mixture on HIGH for an extended period because very high heat can sometimes cause sour cream-based sauces to separate.

Step 5: Cook the Noodles Separately

About 20 minutes before the sauce is ready, bring a large pot of salted water to a boil.

Add the egg noodles and cook them until they are slightly firmer than al dente.

For example, if the package recommends cooking the noodles for 8 minutes, cook them for approximately 5 to 6 minutes.

This is important because the noodles will continue softening after they are added to the slow cooker.

Drain them thoroughly, but do not rinse them.

Leaving a small amount of starch on the noodles helps the creamy sauce cling to them.
