Slow Cooker Stove Top Stuffing Meatloaf

If you love classic meatloaf but want something a little more comforting and flavorful, this Slow Cooker Stove Top Stuffing Meatloaf is an easy recipe to add to your dinner rotation. Instead of relying on breadcrumbs alone, this version uses seasoned Stove Top stuffing mix to help bind the meat while adding plenty of savory herb flavor.

Cooking the meatloaf in the slow cooker also keeps it wonderfully tender. As it cooks slowly, the flavors have time to blend together, and you can prepare your side dishes while dinner takes care of itself.

Why You’ll Love This Meatloaf

There are several reasons this recipe is such a great weeknight dinner:

  • Easy preparation: Most of the work is simply mixing the ingredients together.
  • Tender texture: Slow cooking helps prevent the meatloaf from becoming dry.
  • Extra flavor: Seasoned stuffing mix brings herbs and savory seasoning to every bite.
  • Family-friendly: It has the familiar comfort of traditional meatloaf with a delicious twist.
  • Convenient: The slow cooker does most of the cooking for you.

Ingredients

For the meatloaf:

  • 2 pounds ground beef
  • 1 box Stove Top stuffing mix, approximately 6 ounces
  • 2 large eggs
  • 1 cup milk
  • 1 small onion, finely diced
  • 1/2 cup shredded cheddar cheese, optional
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt, or to taste

For the glaze:

  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon yellow mustard
  • 1 tablespoon Worcestershire sauce

Step-by-Step Instructions

1. Prepare the Slow Cooker

Begin by lightly spraying the inside of your slow cooker with nonstick cooking spray. This makes removing the meatloaf much easier once it has finished cooking.

You can also place a large piece of parchment paper or aluminum foil inside the cooker, leaving enough overhang to create handles. This makes lifting the finished meatloaf out especially simple.

2. Soften the Stuffing Mix

Place the dry stuffing mix in a large mixing bowl. Add the milk and eggs and stir everything together.

Let the mixture sit for about 5 minutes. The stuffing will absorb some of the liquid and become softer.

This step is important because it helps the stuffing blend smoothly into the ground beef rather than remaining dry or crunchy.

3. Add the Flavorful Ingredients

Add the diced onion, Worcestershire sauce, garlic powder, black pepper, and salt to the softened stuffing mixture.

If you’re using cheddar cheese, add it at this stage as well.

Stir until the ingredients are evenly distributed.
