Smothered Chicken Thighs with Caramelized Onions
There is something wonderfully comforting about a skillet filled with golden chicken thighs, deeply caramelized onions, and a rich, savory gravy. Smothered Chicken Thighs with Caramelized Onions is the kind of meal that turns simple ingredients into something that tastes slow-cooked and special.
The chicken is first seasoned and browned until beautifully golden, then nestled into a silky onion gravy where it finishes cooking and absorbs all those savory flavors. The onions bring natural sweetness, while garlic, herbs, and a touch of broth create a sauce that is rich without being complicated.
Serve it over mashed potatoes, rice, egg noodles, or warm crusty bread so none of that delicious gravy goes to waste.

Ingredients
For the Chicken
- 6 bone-in, skinless chicken thighs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried thyme
- 1/4 teaspoon onion powder
- 2 tablespoons all-purpose flour
- 2 tablespoons olive oil
- 1 tablespoon butter
For the Caramelized Onion Gravy
- 2 large yellow onions, thinly sliced
- 3 cloves garlic, minced
- 2 tablespoons butter
- 1 tablespoon all-purpose flour
- 2 1/2 cups chicken broth
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried parsley
- 1/4 teaspoon black pepper
- Salt, to taste
- 1/3 cup heavy cream, optional
- 1 tablespoon fresh parsley, chopped, for garnish
Step 1: Prepare the Chicken
Begin by patting the chicken thighs dry with paper towels. Removing excess moisture helps the chicken develop a better golden-brown crust when it hits the skillet.
In a small bowl, combine the salt, black pepper, paprika, garlic powder, dried thyme, and onion powder.
Season both sides of each chicken thigh generously with the spice mixture. Lightly dust the chicken with the flour, shaking off any excess.
The thin layer of flour serves two purposes: it helps the chicken brown beautifully and later contributes to the thickness of the gravy.
Step 2: Brown the Chicken
Heat a large, heavy skillet over medium-high heat. Add the olive oil and butter.
Once the butter melts and begins to foam, carefully place the chicken thighs into the skillet.
Cook for about 4–5 minutes on the first side, without moving them too much. You want a deep golden crust to form.
Flip the chicken and cook for another 3–4 minutes.
The chicken does not need to be fully cooked at this stage. It will finish cooking later in the gravy.
Transfer the browned chicken to a plate and set it aside.
Step 3: Slowly Caramelize the Onions
Reduce the heat to medium-low.
Add the sliced onions to the same skillet. If the pan looks dry, add another small knob of butter.
Stir the onions, scraping the bottom of the pan with a wooden spoon to loosen the browned bits left behind by the chicken.
Cook the onions slowly for approximately 15–20 minutes, stirring every few minutes.
This step is worth taking your time with. The onions should gradually soften, turn golden brown, and develop a naturally sweet, concentrated flavor.
If the onions begin browning too quickly, lower the heat. Caramelization is about slowly developing flavor rather than simply cooking the onions until brown.
