The pork is first seasoned and seared until golden, then slowly simmered in a creamy, flavorful gravy until it becomes juicy and tender. This recipe is simple enough for a family dinner but satisfying enough to serve on a special weekend meal. The secret is building flavor step by step: seasoning the pork, browning it properly, cooking the onions in the same pan, and letting everything simmer together until the gravy becomes rich and comforting.
Ingredients
For the Pork Chops
- 4 bone-in or boneless pork chops
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- ½ teaspoon dried thyme
- ½ cup all-purpose flour
- 2 tablespoons olive oil
- 2 tablespoons butter
For the Onion Gravy
- 1 large onion, thinly sliced
- 3 cloves garlic, minced
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups chicken broth
- ½ cup heavy cream or whole milk
- 1 teaspoon Worcestershire sauce
- ½ teaspoon black pepper
- ½ teaspoon paprika
- Salt to taste
- Fresh parsley for garnish, optional
Step 1: Choose the Right Pork Chops
For the best flavor, use pork chops that are about ¾ to 1 inch thick. Bone-in pork chops usually stay juicier and have more flavor, but boneless pork chops also work well.
Avoid very thin pork chops if possible because they can dry out quickly. Thicker chops are better for smothering because they can simmer in the gravy without becoming tough.
Step 2: Season the Pork Chops
Pat the pork chops dry with paper towels. This helps them brown better when they hit the hot pan.
In a small bowl, mix salt, black pepper, garlic powder, onion powder, paprika, and dried thyme.
Sprinkle the seasoning over both sides of the pork chops. Rub it in gently so the flavor coats the meat evenly.
Let the pork chops rest for about 10 to 15 minutes while you prepare the other ingredients. This gives the seasoning time to settle into the meat.
Step 3: Coat the Pork Chops with Flour
Place the flour in a shallow plate.
Lightly coat each pork chop in the flour, shaking off the excess. The flour helps create a golden crust and also helps thicken the gravy later.
Do not pack too much flour onto the pork. A light coating is enough.
Step 4: Sear the Pork Chops
Heat olive oil and butter in a large skillet over medium-high heat.
Once the butter is melted and the pan is hot, add the pork chops. Cook for about 3 to 4 minutes on each side, or until they develop a golden-brown crust.
The pork chops do not need to be fully cooked at this stage. They will finish cooking later in the gravy.
Remove the pork chops from the skillet and place them on a plate.
