SMOTHERED PORK CHOPS

STEP 2: Sear Until Golden

Heat oil or butter in a heavy skillet over medium-high heat.
Place the pork chops in the pan without overcrowding.

Cook 3–4 minutes per side until a deep golden crust forms.
Remove the chops and set aside. Don’t worry if they’re not fully cooked—this is just the beginning.

Tip: Those browned bits at the bottom of the pan? Keep them! They’re flavor gold.

STEP 3: Sauté the Onions and Garlic

In the same skillet, melt 2 tbsp butter.
Add sliced onions and cook until they turn soft, golden, and fragrant—about 8–10 minutes.
Stir in the minced garlic and cook for another 1 minute.

The onions will pick up the leftover flavors from the pork, creating the base of a delicious gravy.

STEP 4: Build the Gravy

Sprinkle 2 tbsp flour over the onion mixture and stir to create a roux. Cook for 1–2 minutes.

Slowly pour in the chicken broth while whisking to avoid lumps.
Add thyme, onion powder, pepper, and salt.
Stir in the heavy cream to make the gravy silky.

Simmer until it thickens into a rich, pourable sauce.

STEP 5: Smother the Pork Chops

Return the seared pork chops to the skillet, nestling them under the gravy.
Spoon some gravy on top to fully “smother” them.

Cover the skillet, reduce the heat to low, and let the pork chops simmer for 25–30 minutes.
This slow cooking allows the pork to become incredibly tender while absorbing all the flavors from the gravy.

If the gravy gets too thick, add a splash of broth.

STEP 6: Serve and Enjoy

Your pork chops should be fork-tender, wrapped in a glossy, flavorful gravy.

Serve them over:

  • Creamy mashed potatoes
  • Fluffy rice
  • Egg noodles
  • Buttery cornbread
  • Garlic mashed cauliflower

Don’t forget to spoon an extra generous amount of gravy over the top!
