Step 1: Prepare the Yeast Mixture

  1. In a small bowl, dissolve the sugar in warm milk, then sprinkle the yeast over the top. Let it sit for 5-10 minutes until the mixture becomes foamy, indicating that the yeast is activated.

Step 2: Mix the Dough

  1. In a large mixing bowl, combine the flour, salt, and poppy seeds. Add the yeast mixture, egg, and melted butter.
  2. Mix until a dough forms, then knead by hand or with a stand mixer fitted with a dough hook for 8-10 minutes, or until the dough is smooth and elastic.

Step 3: First Rise

  1. Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm area for about 1 hour, or until it has doubled in size.

Step 4: Shape the Rolls

  1. Punch down the dough to release the air, then divide it into equal portions (8-10 pieces, depending on your preferred size).
  2. Shape each piece into a round roll and place it in a greased, individual ramekin or a muffin tin for a rounded shape.

Step 5: Second Rise

  1. Cover the rolls lightly with a cloth and let them rise for another 20-30 minutes, or until they have doubled in size.

Step 6: Bake

  1. Preheat your oven to 350°F (175°C).
  2. Brush the tops of the rolls with melted butter for a beautiful golden color.
  3. Bake for 20-25 minutes, or until the rolls are golden brown and sound hollow when tapped on the bottom.

Step 7: Serve

  1. Remove the rolls from the oven and brush them with more melted butter for added shine and flavor.
  2. Allow them to cool slightly on a wire rack, then serve warm.

  • Measure Flour Properly: For soft rolls, avoid overpacking the flour. Lightly spoon the flour into your measuring cup and level it off with a knife.
  • Use Fresh Yeast: Make sure your yeast is fresh and active. Expired yeast may not rise well, resulting in dense rolls.
