Why This Casserole Is a Favorite

  • Easy to prepare with everyday ingredients
  • Creamy and savory without being heavy
  • Perfect make-ahead meal for busy days
  • Kid-friendly and freezer-friendly

Ingredients You’ll Need

For the Noodle Base

  • 12 oz egg noodles
  • Salt (for boiling water)

For the Beef Sauce

  • 1 lb ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste

For the Creamy Layer

  • 1½ cups sour cream
  • 1 cup cottage cheese or cream cheese (softened)

Topping

  • 1½–2 cups shredded cheddar cheese
  • Fresh parsley (optional, for garnish)

Step-by-Step Method

Step 1: Cook the Noodles

Bring a large pot of salted water to a boil. Add the egg noodles and cook according to package instructions until just al dente. Drain well and set aside. Avoid overcooking, as the noodles will continue to soften in the oven.

Step 2: Prepare the Beef Mixture

Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon. Once the beef is mostly cooked, add the chopped onion and sauté for 3–4 minutes until softened. Stir in the minced garlic and cook for another 30 seconds until fragrant.

Step 3: Build the Sauce

Pour in the tomato sauce and diced tomatoes. Season with paprika, Italian seasoning, salt, and black pepper. Stir well and let the mixture simmer gently for 5–7 minutes, allowing the flavors to blend and the sauce to slightly thicken. Remove from heat.
