Optional Additions

  • ½ cup shredded cheddar cheese
  • 1 small diced jalapeño
  • ½ cup corn kernels
  • A pinch of black pepper
  • A little honey for serving

Step 1: Prepare the Cornmeal Mixture

In a large mixing bowl, combine:

  • Cornmeal
  • Flour
  • Sugar
  • Salt
  • Baking powder
  • Baking soda

Whisk the dry ingredients together until evenly mixed.

The flour helps create a softer texture, while the cornmeal provides the classic Southern flavor and slightly coarse texture.


Step 2: Add the Wet Ingredients

In a separate bowl, whisk together:

  • Buttermilk
  • Warm water
  • Egg
  • Melted butter

Slowly pour the wet mixture into the dry ingredients.

Stir gently until everything is combined.

The batter should be thicker than pancake batter but thinner than traditional cornbread batter. It should be easy to spoon into a skillet but should not spread like a liquid.
