Southern Pimento Cheese: A Creamy, Tangy Southern Classic

Few Southern dishes are as simple, comforting, and versatile as pimento cheese. Often nicknamed the “pâté of the South,” this creamy spread combines sharp cheddar cheese, sweet pimentos, mayonnaise, and a handful of seasonings into a mixture that is rich, tangy, slightly sweet, and wonderfully savory.

Southern pimento cheese can be served as a sandwich filling, cracker spread, dip, burger topping, or even alongside fresh vegetables. The beauty of the recipe is that it requires no complicated cooking techniques. The real secret lies in choosing flavorful ingredients and balancing their textures and flavors.

This homemade version keeps the traditional Southern character while adding a few small touches that make the finished spread especially flavorful.

What Makes Southern Pimento Cheese Special?

At first glance, pimento cheese may look like an ordinary cheese spread. However, the combination of ingredients creates a surprisingly complex flavor.

Sharp cheddar provides the deep, savory cheese flavor. Pimentos contribute a mild sweetness and subtle peppery character, while mayonnaise brings everything together into a smooth, creamy mixture.

A little cream cheese can make the texture particularly luxurious, while garlic powder, onion powder, and a touch of cayenne add background seasoning without overwhelming the cheese.

The result should be creamy but not runny, flavorful but not excessively salty, and textured enough that you can still see and taste the shredded cheese and tiny pieces of pimento.


Ingredients You’ll Need

For approximately 2½–3 cups of pimento cheese:

  • 2 cups freshly shredded sharp cheddar cheese
  • 4 ounces cream cheese, softened
  • ½ cup mayonnaise
  • ¼ cup diced pimentos, thoroughly drained
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon smoked paprika
  • ⅛ teaspoon cayenne pepper, optional
  • ½ teaspoon Worcestershire sauce
  • ¼ teaspoon freshly ground black pepper
  • Salt, to taste
  • 1 teaspoon Dijon mustard, optional
  • 1–2 tablespoons finely chopped green onions, optional

Choosing the Cheese

Freshly shredded cheddar is highly recommended. Pre-shredded cheese often contains anti-caking ingredients that can make the finished pimento cheese less creamy.

For a traditional Southern flavor, sharp or extra-sharp cheddar works beautifully. You can also combine sharp cheddar with a little mild cheddar for a softer, more rounded flavor.


Step-by-Step Method

Step 1: Soften the Cream Cheese

Remove the cream cheese from the refrigerator and allow it to soften at room temperature for about 20–30 minutes.

Softened cream cheese is much easier to blend with the mayonnaise. If it is still cold and firm, you may end up with small lumps throughout the mixture.

You want it soft enough to stir easily, but it doesn’t need to be warm.


Step 2: Prepare the Pimentos

Drain the pimentos very well.

This step is more important than it might seem. Excess liquid can make your pimento cheese watery and prevent it from reaching that thick, spreadable consistency.

After draining, gently pat the pimentos with a paper towel. If they are in large pieces, chop them into small, bite-sized pieces.

Don’t puree them. Small pieces of pimento give the spread its characteristic appearance and little bursts of sweetness.


Step 3: Shred the Cheddar

Shred the cheddar using the large holes of a box grater.

Freshly shredded cheese will blend more naturally into the mixture and retain a pleasant texture.

For an especially interesting flavor, try using a combination such as:

  • 1½ cups sharp cheddar
  • ½ cup extra-sharp cheddar

You can also experiment with a small amount of Monterey Jack or pepper Jack, although a traditional Southern version generally keeps cheddar as the star.
