🛒 Ingredients

For the Pie Crust:

  • 1 ½ cups all-purpose flour
  • ½ teaspoon salt
  • ½ cup unsalted butter, cold and cubed
  • 3–4 tablespoons ice water

For the Filling:

  • 1 lb (450 g) ground beef (80/20 for best flavor)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon chili powder (optional, for a southern kick)
  • 1 cup shredded cheddar cheese
  • ½ cup shredded Monterey Jack or mozzarella cheese
  • ¼ cup tomato paste or ketchup
  • ½ cup milk
  • 2 large eggs
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon mustard

👩‍🍳 Step-by-Step Instructions

Step 1: Prepare the Pie Crust

  1. In a large mixing bowl, combine flour and salt.
  2. Cut in cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  3. Gradually add ice water, one tablespoon at a time, mixing until the dough forms a ball.
  4. Flatten the dough into a disk, wrap in plastic, and refrigerate for at least 30 minutes.

Step 2: Cook the Beef Filling

  1. Heat a large skillet over medium-high heat.
  2. Add the ground beef and cook until browned, breaking it apart with a spatula.
  3. Add chopped onion and garlic, cooking until soft and fragrant.
  4. Stir in smoked paprika, chili powder, salt, black pepper, tomato paste, Worcestershire sauce, and mustard.
  5. Simmer for 3–4 minutes, then remove from heat and allow to cool slightly.

Step 3: Prepare the Cheese Mixture

  1. In a medium bowl, whisk together the eggs and milk until smooth.
  2. Stir in shredded cheddar and Monterey Jack (or mozzarella) cheese.
  3. Gently fold in the cooked beef mixture, making sure the meat is evenly coated.
