3. Sear the Chicken

Place a large skillet over medium-high heat and add the olive oil.

Once the oil is hot, carefully place the chicken thighs into the pan. Avoid overcrowding the skillet; if necessary, cook the chicken in batches.

Sear the chicken for approximately 5–7 minutes on the first side, without constantly moving it. You want the surface to become deeply golden and slightly crisp.

Flip the chicken and cook for another 4–5 minutes.

At this stage, the chicken doesn’t necessarily need to be completely cooked through because it will finish cooking in the sauce.

4. Add the Garlic Butter

Reduce the heat to medium.

Push the chicken toward the sides of the skillet and add the butter to the center. Once it begins to melt, add the minced garlic.

Cook the garlic for about 30–60 seconds, stirring gently.

Be careful not to let the garlic burn. Fresh garlic can go from fragrant to bitter very quickly.

5. Pour in the Sauce

Pour the honey-soy mixture into the skillet around the chicken.

As the sauce hits the hot pan, it will begin bubbling almost immediately. Use a wooden spoon or spatula to gently scrape up the browned bits from the bottom of the skillet. These caramelized pieces add a tremendous amount of flavor to the sauce.

Turn the chicken several times so the sauce coats both sides.

6. Let the Sauce Become Sticky

Reduce the heat to medium-low and allow everything to simmer for approximately 6–10 minutes.

As the liquid reduces, the honey will begin caramelizing and the butter will combine with the sauce to create a glossy glaze.

Turn the chicken occasionally, spooning the sauce over the top each time.

You’ll know the sauce is ready when it becomes noticeably thicker and sticks to the chicken rather than running freely across the pan.

If the sauce becomes too thick before the chicken is completely cooked, add a tablespoon or two of water and continue cooking.

7. Check the Chicken

Use a meat thermometer to check the thickest part of the chicken. Chicken should reach an internal temperature of 165°F (74°C) for safe consumption.

For especially thick thighs, continue cooking gently until they reach the proper temperature.

Avoid cooking the sauce over very high heat at this point, since the honey can burn before the chicken finishes cooking.

8. Coat the Chicken One Final Time

Once the chicken is cooked, turn each piece through the thickened sauce one last time.

Spoon the garlic butter glaze over the top repeatedly until every thigh is covered in the shiny, caramelized sauce.

Turn off the heat and allow the chicken to rest for a few minutes. This gives the juices a chance to redistribute while the glaze settles onto the meat.

9. Garnish and Serve

Transfer the chicken thighs to a serving plate and spoon any remaining sauce from the skillet over them.

Finish with chopped parsley, sesame seeds, or sliced green onions if desired.

Serve immediately while the glaze is warm and glossy.

What to Serve With Sticky Garlic Butter Chicken

The rich, sweet-savory glaze pairs particularly well with simple side dishes. Try serving the chicken with:

  • Steamed white or jasmine rice
  • Garlic mashed potatoes
  • Buttered noodles
  • Roasted broccoli
  • Green beans
  • Roasted carrots
  • Creamy coleslaw
  • A simple cucumber salad

Rice is especially useful because it soaks up the extra garlic butter sauce.

Tips for the Best Results

Dry the chicken before seasoning. Moisture on the surface can prevent proper browning.

Don’t rush the searing. Let the chicken sit undisturbed long enough to develop a golden crust.

Use fresh garlic. Freshly minced garlic gives the sauce a much stronger and more aromatic flavor than pre-minced alternatives.

Keep an eye on the heat. Honey caramelizes quickly. Medium-low heat is ideal once the sauce has been added.

Don’t discard the pan juices. Those browned bits left behind after searing become part of the sauce and add incredible depth.

Let the chicken rest briefly. A few minutes of resting helps keep the thighs juicy.
