Instructions

1. Preheat the Oven

Set your oven to 350°F (175°C). Grease a 9×13-inch baking dish lightly.


2. Make the Pretzel Crust

  1. In a medium bowl, combine crushed pretzels, granulated sugar, and melted butter. Mix until well coated.

  2. Optional: Toast the crushed pretzels in a dry skillet for a richer, nuttier flavor.

  3. Press the mixture firmly into the bottom of the prepared baking dish.


3. Bake the Crust

  • Bake the crust for 10 minutes or until lightly golden.

  • Remove from oven and let cool completely on a wire rack. This ensures the cream cheese layer won’t melt when added.


4. Prepare the Cream Cheese Layer

  1. In a large bowl, beat softened cream cheese, powdered sugar, and vanilla extract using an electric mixer on medium speed until smooth and creamy.

    • Tip: Use a vanilla bean for extra depth. Scrape seeds into the cream cheese mixture and remove the pod before folding in whipped topping.

  2. Gently fold in the whipped topping until combined. Avoid overmixing to keep the filling light and airy.

  3. Spread the cream cheese mixture evenly over the cooled pretzel crust using a spatula.


5. Make the Strawberry Gelatin Layer

  1. Dissolve strawberry gelatin in 2 cups boiling water, stirring until completely smooth.

  2. Let it cool slightly (not set) and gently fold in the sliced strawberries.

    • Tip: If using frozen strawberries, thaw fully and drain excess liquid.


6. Assemble the Dessert

  • Pour the strawberry gelatin mixture over the cream cheese layer in the baking dish. Tilt the dish to spread it evenly.

  • Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight, until the gelatin is fully set.


7. Serve & Enjoy

  • Cut into squares and serve chilled.

  • Optional garnish: fresh mint leaves, additional whipped topping, or a drizzle of chocolate sauce for extra flair.
