
Sweet Cheese & Apricot Yeast Rolls

Ingredients
For the yeast dough
- 3 cups all-purpose flour, plus more as needed
- 2 ¼ teaspoons active dry yeast
- ¼ cup granulated sugar
- ½ teaspoon salt
- ¾ cup warm whole milk
- ¼ cup unsalted butter, melted and slightly cooled
- 1 large egg
- 1 teaspoon vanilla extract
For the sweet cheese filling
- 8 ounces cream cheese, softened
- ¼ cup granulated sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 1 tablespoon all-purpose flour
For the apricot layer
- ½ cup apricot preserves or apricot jam
- 1 tablespoon water, if needed to loosen the preserves
For finishing
- 1 tablespoon melted butter
- Powdered sugar, optional
Step-by-Step Method
1. Prepare the yeast
Start by warming the milk until it is comfortably warm but not hot. Pour it into a large mixing bowl and stir in the sugar and yeast.
Let the mixture sit for about 5–10 minutes. The yeast should become slightly foamy on the surface. This is a good indication that the yeast is active.
If using instant yeast, you can skip the waiting period and combine it directly with the dry ingredients.
2. Make the dough
Add the melted butter, egg, vanilla extract, and salt to the milk mixture. Stir until everything is combined.
Gradually add the flour, about ½ cup at a time, mixing after each addition. Once the dough becomes too thick to stir comfortably, transfer it to a lightly floured surface.
Knead the dough for approximately 6–8 minutes, until it becomes smooth, soft, and elastic.
The dough should feel slightly tacky but should not stick heavily to your hands. Add a small amount of flour only when necessary; adding too much can make the finished rolls dense.
