Tangy Lemon Cream Cheese Truffles Recipe

Method:

1. Prepare the Cream Cheese Mixture

  • Start by softening your cream cheese. You can either let it sit at room temperature for about 30 minutes or microwave it for a few seconds until it’s soft but not melted.
  • In a large bowl, use a hand mixer or stand mixer to beat the softened cream cheese until smooth and creamy.
  • Gradually add in the powdered sugar, lemon juice, lemon zest, and vanilla extract. Continue mixing until the mixture is smooth and fully combined. The lemon zest will add extra brightness to the flavor, but if you prefer a milder lemon taste, you can leave it out.

2. Add Crushed Graham Crackers

  • Once the cream cheese mixture is well-blended, add the crushed graham crackers (or digestive biscuits) to the bowl. Use a spatula or spoon to gently fold the crushed crackers into the mixture until fully incorporated. The crackers will help bind the truffles and add a slight crunch to the otherwise creamy texture.

3. Chill the Mixture

  • Cover the bowl with plastic wrap and place it in the refrigerator for about 1 hour. This step is crucial, as it allows the mixture to firm up, making it easier to shape into balls.

4. Form the Truffles

  • After the mixture has chilled and is firm enough to handle, it’s time to form the truffles. Use a small cookie scoop or a spoon to portion out about 1 tablespoon of the mixture. Roll each portion between your hands to form smooth balls.
  • Once all the truffles are formed, roll each one in powdered sugar to coat them evenly. The powdered sugar adds a beautiful snowy look and a bit of extra sweetness to balance the tanginess of the lemon.

5. Chill Again

  • Place the powdered sugar-coated truffles on a parchment-lined baking sheet or plate. Transfer them back to the refrigerator for at least another 30 minutes to set completely. This will help them hold their shape and develop the best texture.

6. Serve and Enjoy!

  • After chilling, your Lemon Cream Cheese Truffles are ready to serve! You can enjoy them straight from the fridge or at room temperature. Their creamy, tangy flavor paired with the sweet powdered sugar coating will be a hit with anyone who loves lemon-flavored desserts.

Storage:

Store these truffles in an airtight container in the refrigerator for up to 5 days. If you’re preparing them for a party, you can make them in advance and chill them until you’re ready to serve.

Tips for Success:

  • Adjust the lemon flavor: If you prefer an extra zesty punch, feel free to add more lemon zest or juice to the cream cheese mixture. Just be cautious of adding too much liquid, as it can affect the consistency.
  • Crushed crackers or biscuits: You can experiment with different types of crackers or biscuits for added texture and flavor. Digestive biscuits provide a slightly nutty flavor, while graham crackers add a classic taste.
  • Freeze them: If you prefer a firmer texture or need to store them for longer, you can freeze these truffles in an airtight container for up to 3 months. Thaw them in the refrigerator before serving.
