Teriyaki Chicken Casserole: A Comforting Fusion Dish

Teriyaki Chicken Casserole is a delicious blend of sweet, savory, and slightly tangy flavors wrapped into a warm, comforting meal. Inspired by classic Japanese teriyaki sauce and Western-style casseroles, this dish is perfect for busy weeknights or cozy family dinners. It combines tender chicken, fluffy rice, vibrant vegetables, and a rich homemade teriyaki sauce baked together to perfection.

Ingredients

For the casserole:

  • 2 cups cooked white rice (preferably day-old)
  • 2 cups cooked chicken breast, diced or shredded
  • 1 cup broccoli florets
  • 1 cup carrots, sliced thin
  • ½ cup bell peppers, chopped
  • ½ cup onion, finely diced
  • 2 cloves garlic, minced

For the teriyaki sauce:

  • ½ cup soy sauce
  • ¼ cup brown sugar
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger (or ginger powder)
  • 2 teaspoons cornstarch
  • 2 tablespoons water

Optional toppings:

  • Sesame seeds
  • Chopped green onions

Step-by-Step Method

Step 1: Prepare the Ingredients

Start by cooking your rice if it’s not already prepared. Day-old rice works best because it’s slightly dry and absorbs the sauce better. Cook the chicken by grilling, baking, or pan-frying until fully done, then cut it into bite-sized pieces or shred it.

Wash and chop all your vegetables so everything is ready to go before cooking begins.
