🍓 Strawberry Shortcake Cheesecake Recipe

🧁 Ingredients:

For the Shortcake Crust:

  • 2 cups crushed golden Oreos (or vanilla wafers)
  • 6 tablespoons unsalted butter, melted

For the Cheesecake Layer:

  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1 tablespoon cornstarch

For the Strawberry Layer:

  • 2 cups fresh strawberries, chopped
  • 1/3 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1/4 cup water

For the Whipped Topping:

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract

For the Shortcake Crumble:

  • 1/2 cup golden Oreos, crushed
  • 1/2 cup freeze-dried strawberries, crushed
  • 2 tablespoons butter, melted

👩‍🍳 Method: Step-by-Step

Step 1: Prepare the Shortcake Crust

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix the crushed golden Oreos with the melted butter until it resembles wet sand.
  3. Press the mixture evenly into the bottom of a 9-inch springform pan. Use the back of a spoon or a flat glass to compact it firmly.
  4. Bake for 10 minutes. Remove and let it cool completely.

Step 2: Make the Cheesecake Filling

  1. In a large mixing bowl, beat the softened cream cheese until smooth and creamy (about 3–4 minutes).
  2. Gradually add the sugar and continue to beat until fully incorporated.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract, sour cream, and cornstarch. Beat until the batter is silky and lump-free.
  5. Pour the cheesecake filling over the cooled crust and smooth out the top.
