If you love bacon, you probably think you’ve already tried every possible cooking trick. Some people bake it, others fry it, and some swear by air fryers. But what if there was one simple ingredient that could make your bacon noticeably crispier, more flavorful, and even help it keep its shape while cooking?

According to a chef’s kitchen trick passed along by a neighbor, the secret ingredient is a light dusting of flour.

It may sound surprising, but a small amount of flour creates an incredibly crisp exterior, helps the fat render more evenly, and prevents the bacon from curling excessively as it cooks. Once you try it, ordinary bacon may never taste quite the same again.

Why Flour Works

When bacon cooks, its fat slowly melts while the meat crisps up. A thin coating of flour helps absorb some of the surface moisture and creates additional texture as it browns.

The flour also:

  • Helps prevent bacon strips from curling and twisting.

Ingredients

  • 12 slices of bacon
  • 1–2 tablespoons all-purpose flour
  • Optional:
    • Freshly ground black pepper
    • Smoked paprika
    • Garlic powder
    • Brown sugar for a sweet-and-savory version

Step 1: Prepare the Bacon

Remove the bacon from the refrigerator and separate the slices.

Place them on a plate or baking sheet lined with parchment paper. Pat the bacon lightly with paper towels if it appears especially moist.

This helps the flour adhere more evenly.

Step 2: Dust with Flour

Place the flour in a fine-mesh sieve or small strainer.

Sprinkle a very thin, even layer over both sides of each bacon strip. The goal is not to coat the bacon heavily. A light dusting is all that’s needed.

Too much flour can create a pasty texture, so less is definitely more.

Step 3: Add Optional Seasonings

If desired, lightly season the bacon after dusting it with flour.

Popular options include:
