Slow Cooker Beef Bourguignon: A Cozy, No-Fuss Twist on the Classic French Stew

Few dishes feel as comforting and satisfying as a warm bowl of Beef Bourguignon. Traditionally, this famous French stew requires careful stovetop cooking, multiple steps, and several hours of attention. However, this slow cooker version keeps all the deep flavors of the classic dish while making the process far simpler. With the help of a slow cooker, you can create a rich, tender stew with minimal effort while your kitchen fills with incredible aromas.

This cozy recipe features tender beef, savory vegetables, herbs, and a flavorful wine-infused sauce that slowly develops depth as it cooks. The result is a hearty, restaurant-worthy meal that feels elegant but is incredibly easy to prepare.

Why You’ll Love This Slow Cooker Version

This recipe is perfect for anyone who wants the comforting flavor of a traditional French stew without complicated steps.

Here’s why it works so well:

  • The slow cooker gently tenderizes tougher cuts of beef.
  • Long cooking time allows the flavors to deepen and blend beautifully.
  • Minimal hands-on cooking makes it perfect for busy days.
  • The dish tastes even better the next day.

Ingredients

To make this hearty stew, you’ll need simple but flavorful ingredients.

For the Stew

  • 2 pounds beef chuck, cut into large cubes
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 4 slices bacon, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 2 cups mushrooms, halved
  • 1 cup pearl onions (optional but traditional)
  • 2 cups beef broth
  • 1 cup dry red wine
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf

For Finishing

  • 2 tablespoons butter
  • 1 tablespoon flour (for thickening)
  • Fresh parsley, chopped

Step-by-Step Instructions

Step 1: Prepare the Beef

Start by patting the beef cubes dry with paper towels. This helps them brown better.

In a bowl, season the beef with salt and black pepper, then lightly toss it with flour. The flour helps create a light crust and later contributes to thickening the stew.

Step 2: Brown the Bacon

In a large skillet over medium heat, cook the chopped bacon until it becomes crispy and releases its flavorful fat.

Remove the bacon and set it aside, but leave the bacon fat in the pan. This will be used to sear the beef and build a deep flavor base.

Step 3: Sear the Beef

Increase the heat slightly and place the beef cubes into the skillet in batches.

Sear them for 2–3 minutes per side until a golden crust forms. Avoid overcrowding the pan, which can cause the beef to steam instead of brown.

Once browned, transfer the beef to the slow cooker.

Step 4: Cook the Aromatics

Using the same skillet, sauté the onion and garlic for about 2 minutes until fragrant. The leftover browned bits in the pan (called fond) add incredible flavor.

Add a splash of the red wine and scrape the bottom of the pan to loosen those flavorful bits.
