Inspired by the famous Thousand Island dressing, this pasta bake has a creamy, slightly sweet, tangy, and savory flavor. The sauce coats every piece of pasta, while the baked cheese topping creates a golden, bubbly crust that makes the dish irresistible.

Unlike traditional pasta bakes that rely only on tomato sauce, this recipe uses a creamy dressing-based sauce that gives the dish a unique burger-inspired flavor. It is similar to enjoying a cheeseburger and pasta casserole in one comforting meal.


Ingredients

For the Pasta Bake

  • 400 g pasta (penne, rigatoni, fusilli, or macaroni)
  • 500 g ground beef
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 red bell pepper, diced
  • 1 cup mushrooms, sliced (optional)
  • 1 cup sweet corn (optional)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • 2 cups shredded cheddar cheese
  • 1 cup mozzarella cheese

For the Thousand Island Sauce

  • 1 cup Thousand Island dressing
  • 1 cup sour cream
  • ½ cup cream cheese, softened
  • ½ cup milk
  • 1 tablespoon ketchup
  • 1 teaspoon mustard
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper

For the Topping

  • ½ cup shredded cheddar cheese
  • 2 tablespoons breadcrumbs (optional)
  • Fresh parsley for garnish

Step 1: Prepare the Pasta

Begin by bringing a large pot of salted water to a boil.

Add the pasta and cook until it is al dente, meaning it is cooked but still slightly firm in the center.

Do not fully cook the pasta because it will continue cooking in the oven. Overcooked pasta can become soft and mushy after baking.

Once cooked, drain the pasta and set it aside.

You can toss it with a small amount of olive oil to prevent it from sticking together while preparing the other ingredients.


Step 2: Cook the Ground Beef

Heat olive oil in a large skillet over medium heat.

Add the chopped onion and cook for 2–3 minutes until it becomes soft and slightly translucent.

Add the minced garlic and cook for another 30 seconds until fragrant.

Add the ground beef and break it apart using a wooden spoon.

Cook until the beef is browned and fully cooked.

Drain any excess grease from the pan. Removing extra fat keeps the pasta bake from becoming too heavy.


Step 3: Season the Beef Mixture

Add salt, black pepper, paprika, Italian seasoning, and garlic powder.

Stir well so the spices coat the meat evenly.

Add the diced bell pepper and mushrooms if using.

Cook for another 3–4 minutes until the vegetables soften slightly.

The goal is not to completely cook the vegetables because they will continue cooking in the oven.


Step 4: Prepare the Thousand Island Sauce

In a large bowl, combine:

  • Thousand Island dressing
  • Sour cream
  • Cream cheese
  • Milk
  • Ketchup
  • Mustard
  • Garlic powder
  • Black pepper

Whisk everything together until smooth and creamy.

The sauce should have a thick but pourable texture.

The Thousand Island dressing provides sweetness and tanginess, while the sour cream and cream cheese create a rich, creamy consistency.
