Sweetened Condensed Milk Cake / 3-Milk Poke Cake Base: A Soft, Moist Dessert Recipe

Sweetened Condensed Milk Cake, also known as a 3-Milk Poke Cake Base, is a rich and tender dessert made from a light sponge-style cake soaked with a creamy milk mixture. The cake is baked first, then poked with holes so the sweet milk mixture can slowly seep into every bite. After chilling, the cake becomes soft, moist, creamy, and full of delicate sweetness.

This recipe is perfect as a base for tres leches cake, birthday cakes, potluck desserts, holiday trays, or any dessert that needs a creamy, melt-in-the-mouth texture. It is simple to make, but the result tastes elegant and bakery-style.

What Makes This Cake Special?

The secret of this cake is the milk soak. A normal cake is baked until fluffy, then a mixture of sweetened condensed milk, evaporated milk, and cream or whole milk is poured over it. The holes allow the milk to absorb evenly instead of sitting on top.

The cake becomes moist but not soggy when made correctly. A good 3-milk poke cake base should be soft enough to absorb the milk, but strong enough to hold its shape when sliced.

Ingredients

For the Cake Base

  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • 5 large eggs, separated
  • 1 cup granulated sugar, divided
  • ⅓ cup whole milk
  • 2 teaspoons vanilla extract
  • ¼ cup melted butter or neutral oil, optional for extra softness

For the 3-Milk Soak

  • 1 can sweetened condensed milk
  • 1 can evaporated milk
  • ½ cup heavy cream or whole milk
  • 1 teaspoon vanilla extract

For the Topping

  • 1 ½ cups heavy whipping cream
  • 3 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Optional Garnishes

  • Cinnamon powder
  • Fresh strawberries
  • Caramel drizzle
  • Chocolate shavings
  • Toasted coconut
  • Chopped nuts

Step 1: Prepare the Baking Dish

Preheat the oven to 350°F / 175°C.

Grease a 9×13 inch baking dish with butter or non-stick spray. You can also lightly dust it with flour if you want the cake to release more easily.

This type of cake is usually served directly from the baking dish because it becomes very moist after soaking.

Step 2: Mix the Dry Ingredients

In a medium bowl, combine the flour, baking powder, and salt.

Whisk them together and set aside.

Mixing the dry ingredients first helps the baking powder spread evenly through the flour, which gives the cake a better rise.

Step 3: Separate the Eggs

Separate the egg yolks from the egg whites into two different bowls.

This step is important because whipped egg whites help create a light, airy cake. A light cake absorbs the milk mixture better than a dense cake.

Make sure there is no egg yolk in the egg whites. Even a small amount of yolk can stop the whites from whipping properly.

Step 4: Beat the Egg Yolks

Add ¾ cup of the sugar to the egg yolks.

Beat the mixture until it becomes pale, thick, and creamy. This usually takes 2 to 3 minutes.

Add the milk, vanilla extract, and melted butter or oil if using. Mix until smooth.

The yolk mixture gives the cake richness and flavor.

Step 5: Add the Flour Mixture

Add the dry ingredients to the egg yolk mixture.

Mix gently until just combined. Do not overmix, because too much mixing can make the cake tough.

The batter will be thick at this stage, but it will become lighter after adding the whipped egg whites.
