Upside-Down Chicken with Veggie Rice Bake Recipe

 

Instructions:

Step 1: Prep the Chicken

  1. Preheat your oven to 375°F (190°C).
  2. Clean the chicken and pat it dry with paper towels.
  3. In a small bowl, mix olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Rub this mixture all over the chicken, including under the skin for maximum flavor.
  4. Using wooden skewers, secure the chicken legs and wings, creating a tripod-like structure, ensuring the chicken can be suspended upside-down on the oven rack. This allows the chicken to roast evenly with the juices dripping onto the rice.

Step 2: Prepare the Veggie Rice Bake

  1. In a baking tray or roasting pan, add the uncooked rice and evenly spread it out.
  2. Heat olive oil in a pan over medium heat. Sauté the chopped onions and garlic until softened and fragrant, about 3-4 minutes.
  3. Add the mixed vegetables to the onion and garlic, stirring for another 2 minutes.
