The secret to a great walnut pie is using toasted walnuts and allowing enough chilling time. Toasting enhances the natural oils in the nuts, making their flavor stronger and more aromatic. Chilling helps the cream filling become firm while staying soft and silky.


Ingredients

For the Pie Crust

  • 1 ¼ cups all-purpose flour
  • ½ teaspoon salt
  • ½ cup cold unsalted butter, cut into cubes
  • 2–4 tablespoons ice water
  • 1 tablespoon sugar (optional)

For the Walnut Filling

  • 1 ½ cups walnuts, roughly chopped
  • 3 large eggs
  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 1 cup heavy cream
  • ½ cup whole milk
  • 3 tablespoons cornstarch
  • 3 tablespoons butter
  • 2 teaspoons vanilla extract
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon (optional)

For the Topping

  • 1 cup whipped cream
  • ¼ cup chopped toasted walnuts
  • A drizzle of caramel sauce (optional)
  • A sprinkle of cinnamon or powdered sugar (optional)

Step 1: Prepare the Pie Crust

Begin by making the crust.

In a large mixing bowl, combine the flour, salt, and sugar if using. Add the cold butter cubes.

Using a pastry cutter, fork, or your fingertips, mix until the butter breaks into small pieces and the mixture resembles coarse crumbs.

The small pieces of butter are important because they create flaky layers during baking.

Add ice water one tablespoon at a time. Mix gently until the dough starts coming together.

Do not knead the dough too much. Overworking it can make the crust hard instead of tender.

Shape the dough into a flat disc, wrap it, and refrigerate for at least 30 minutes.


Step 2: Roll and Bake the Crust

Preheat the oven to 375°F (190°C).

Lightly flour your work surface and roll the chilled dough into a circle slightly larger than your pie dish.

Carefully place the dough into a 9-inch pie pan.

Press it gently into the bottom and sides, then trim the extra edges.

Prick the bottom of the crust with a fork to prevent air bubbles.

Cover the crust with parchment paper and fill it with pie weights, dried beans, or rice.

Bake for 15 minutes.

Remove the weights and parchment, then bake for another 5–8 minutes until lightly golden.

Allow the crust to cool while preparing the filling.


Step 3: Toast the Walnuts

Place the chopped walnuts on a baking tray.

Toast them in a 350°F (175°C) oven for about 7–10 minutes, stirring halfway through.

The walnuts are ready when they smell fragrant and slightly darker.

Allow them to cool before adding them to the filling.

Toasting is an important step because it brings out the natural oils and gives the pie a deeper nutty flavor.


Step 4: Prepare the Cream Filling

In a medium saucepan, combine the heavy cream, milk, brown sugar, granulated sugar, cornstarch, and salt.

Whisk until smooth.

Place the saucepan over medium heat and cook while stirring constantly.

After several minutes, the mixture will begin to thicken into a creamy custard.

Continue stirring to prevent lumps from forming.

The filling should become thick enough to coat the back of a spoon.
