Ingredients

For the Pie Crust

  • 250 g all-purpose flour
  • 150 g cold unsalted butter, cut into small cubes
  • 50 g powdered sugar
  • 1 egg yolk
  • 2–3 tablespoons cold water
  • 1 pinch of salt

For the Walnut Filling

  • 200 g walnuts, roughly chopped
  • 300 ml heavy cream
  • 200 ml whole milk
  • 3 large eggs
  • 100 g brown sugar
  • 50 g white sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon (optional)
  • 1 pinch of salt

For Decoration (Optional)

  • A handful of toasted walnut pieces
  • Light dusting of powdered sugar
  • Whipped cream

Step-by-Step Preparation Method

Step 1: Prepare the Pie Dough

Begin by making the crust because it needs time to rest before baking.

Place the flour, powdered sugar, and salt in a large mixing bowl. Mix them together evenly. Add the cold butter pieces and use your fingertips to rub the butter into the flour until the mixture resembles coarse crumbs.

The butter should remain cold. This is important because small pieces of butter create layers inside the dough, producing a crisp and flaky crust after baking.

Add the egg yolk and mix gently. Slowly add cold water, one tablespoon at a time, until the dough begins to come together.

Avoid kneading the dough too much. Overworking it develops gluten, which can make the crust hard instead of tender.

Shape the dough into a flat disk, wrap it, and refrigerate for at least 30 minutes.


Step 2: Prepare the Walnuts

While the dough rests, prepare the walnuts.

Place the chopped walnuts in a dry frying pan over medium-low heat. Toast them for approximately 5–7 minutes, stirring frequently.

Toasting is a crucial step because it releases the natural oils inside the walnuts and intensifies their flavor. Raw walnuts can taste mild, while toasted walnuts develop a deeper, slightly caramelized aroma.

Allow them to cool before adding them to the filling.
