Zesty Marinated Cucumber, Onion, and Tomato Salad Recipe

 

Instructions:

  1. Prepare the Vegetables: Begin by slicing the cucumbers, tomatoes, and red onion. For the best texture, slice the cucumbers and onions thinly, and cut the tomatoes into wedges or slices, depending on your preference. Place the sliced vegetables in a large bowl.
  2. Make the Marinade: In a separate small bowl, whisk together the apple cider vinegar, olive oil, sugar, salt, black pepper, dried oregano (or Italian seasoning), and garlic powder. Make sure the sugar and salt are fully dissolved to create a smooth marinade.
  3. Combine and Marinate: Pour the prepared marinade over the vegetables in the large bowl. Toss everything together gently to ensure the cucumbers, tomatoes, and onions are evenly coated with the dressing. Cover the bowl with plastic wrap or a lid and refrigerate for at least 2 hours, or up to 24 hours, to allow the flavors to meld together. The longer it marinates, the more intense the flavors will become.
  4. Serve: Before serving, give the salad a good toss to redistribute the dressing. If desired, garnish with fresh chopped parsley for a pop of color and added freshness. Serve chilled as a side dish or as a refreshing snack.
